Creamy Ruben Soup

This is from the Taste of Home Award winner's book, 20014
- 1/2 C chopped onion
- 1/4 C chopped celery
- 1/4 C. chopped green pepper
- 1/4 C butter, cubed
- 2 TBS. all purpose flour
- 1 C Beef broth
- 2 C half and half cream
- 1/4 lb. sliced deli corned beef, coarsely chopped
- 3/4 C sauerkraut, rinsed and drained well
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 C (4 oz.) shredded Swiss Cheese
Blueberry-lemon Muffins

This is a great spring sweet!
- 2 1/2 C all purpose flour
- 3/4 C sugar plus more for sprinkling on top of muffins
- 1 TBS. baking powder
- 1/8 tsp. fine salt
- freshly grated nutmeg
- 1/2 C (1 stick) unsalted butter
- 1 C whole milk
- 2 large eggs at room temp.
- 1 TBS. finely grated lemon zest
- 1/2 tsp. pure vanilla extract
- 1 1/2 C fresh blueberries, rinsed and dried
Fresh Mozarella & Tomato Salad

- 6 plum tomatoes chopped
- 2 Cartons (8oz each) fresh mozzarella cheese pearls, drained
- 1/3 C minced fresh basil
- 1 TBS. minced fresh parsley
- 2 tsp. minced fresh mint
- 1/4 C lemon juice
- 1/4 C. olive oil
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 2 med. ripe avocados, pealed chopped
Oatmeal Surprise Cookies

Peanut Butter Cream Cheese Frosting

- 1 C real whipping cream shipped
- 1 8 oz. pkg. cream cheese
- 1 tsp. vanilla
- 1 TBS. butter flavored crisco or butter
- 1 1/2 C Powdered sugar
- 1 C smooth peanut butter
