Chocolate Chai Mini Loaves

- Frosting:
- 2 oz. semisweet chocolate, chopped
- 1/2 C water
- 1/2 C butter softened
- 1 C packed brown sugar
- 2 eggs
- 1 tsp. vanilla
- 1 1/2 C all-purpose flour
- 3 TBS. chai tea latte mix
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 C sour cream
- 1 C confectioner's sugar
- 1 TBS. butter, softened
- 1 TBS. chair tea latte mix
- 1/2 tsp. vanilla extract
- 4-5 tsp. milk
Maxine's Veggie Dip

This dip was given to me by my mother-in-law
- 1 C real mayonnaise (no substitutes)
- 1 C sour cream
- 1 tsp. Accent
- 1 tsp. Seasoned Salt
- 1 tsp Onion Powder
- 1 tsp. Dill Weed
- 1/2 -3/4 tsp. Worsteshershire Sauce
Applewood Julep

This is a refreshing and tasty drink that is served at the Applebarn Restaurant in Pigeon Forge, TN
- 1 quart unsweetened apple juice, chilled
- 1 C unsweetened pineapple juice, chilled
- 1 C orange juice, chilled
- 1/4 C lemon juice, chilled
- fresh mint sprigs
Lemon, Almond, Berry Cake

- Drizzle:
- 1/2 C plus 2 TBS.
- 1 tsp. baking soda
- 1/3 plus 1 TBS. almond flour (I pulsed some almonds in a food processor to make 1/3 C.)
- 3 tsp. lemon zest ( I used dried)
- 1 stick plus 2 TBS. butter, softened
- 1 C sugar
- Juice from 1 large lemon
- 1 tsp. vanilla extract
- 2 eggs
- 1 1/2 C berries
- powdered sugar
- 1 TBS. butter
- lemon extract
Paula Dean's Peanut Butter Cookies

This recipe was given to me by my mother-in-law
- 1 C peanut butter
- 1 C Splenda
- 1 egg
- 1 tsp. vanilla
Fresh Sausage Cake

This recipe is one of the most unique I've ever seen
- 1 lbs. fresh sausage (unseasoned, not browned)
- 1 lbs. raisins
- 2 C Brown sugar
- 1/2 tsp. nutmeg
- 1/2 tsp. cloves
- 1/2 tsp. cinnamon
- 1 TBS. cocoa
- pinch of salt
- 1 tsp. soda in 1 C of boiling water
- 3 C flour
- 1 C mixed nuts (black walnuts **we use English)
Cappacino Punch

- 1/2 C sugar
- 1/4 C instant coffee
- 1 C boiling water
- 8 C milk
- 1 qurt. vanilla icecream
- 1 qurt. chocolate icecream
Spinach-Stuffed Beef Tenderloin

I made this many years ago for a dinner party
- 1/2 lb. fresh mushrooms, chopped
- 4 green onions, sliced
- 2 TBS. olive or canola oil, divided
- 2 garlic cloves, minced, divided
- 2 pkgs. (10 oz. ) each fresh spinach leaves
- 1 tsp. salt, divided
- 1/8-1/4 tsp. cayenne pepper
- 1 whole beef tenderloin (about 3 1/2 lb.) trimmed
- 1/4 tsp. onion powder
- 1/4 tsp. coarsely ground pepper
Hot Cheesy Spinach Dip

- 2 TBS. butter
- 1/4 C chopped onion (about 1/4 medium)
- 2 cloves garlic, minced (1 tsp.)
- 1 TBS. all-purpose flour
- 1 3/4 C half and half
- 2 pkg. frozen, chopped spinach, thawed, well drained
- 1 can (8 oz.) sliced water chestnuts, drained
- 1 C shredded cheddar cheese
- 1 pkg. dry vegetable soup mix
- 1/4 C shredded Parmesan cheese
