Eggplant Parmesan

- Ingredients
- 2 lbs (about 2 large) eggplants
- Kosher salt
- 1 28-oz can whole peeled tomatoes
- 1 clove garlic, peeled and minced
- Olive oil
- Freshly ground black pepper
- 1/2 cup all-purpose flour
- 1/2 cup fine dry breadcrumbs
- 4 large eggs, beaten
- 1 1/2 lbs of fresh mozzarella cheese, sliced into 1/4 inch rounds
- 1 cup grated high quality Parmesan cheese
- 1 packed cup fresh basil leaves
Cream Cheese Sugar Cookies

1. Combine sugar, margarine, cream cheese, salt almond extract, vanilla & egg yolk
- 1 C sugar
- 1 C margarine or butter softened
- 3 oz. pkg. cream cheese, softened
- 1/2 tsp. salt
- 1/2 tsp. almond extract
- 1/2 tsp. vanilla
- 1 egg yolk (reserve white)
- 2 C all purpose flour

- 1 can Eagle Brand sweetened condensed milk
Bush's Chili Cheese

We sampled this recipe in a local grocery store
- 1 pkg. cream cheese softened
- 1/2 C chunky Salsa
- 1 C shredded cheddar cheese divided
- 1 Can Bush's Red chilli Beans, undrained
- 3 TBS. sliced green onions
- 3 TBS. pitted sliced black olives (optional)
- 1 Bag Tortilla chips
Dr. Pepper Pulled Pork for Slow Cooker

1. Placed chopped onions in the bottom of the slow cooker
- 2 1/2 to 3 lb. pork butt (also known as pork shoulder)
- 24 oz. (2 cans) Dr. Pepper
- 1 med. onion, cut in quarters and then again in half
- 2 garlic cloves, minced
- 1 1/2 tsp. dry ground mustard
- 1/4 tsp. cayenne pepper
- salt and pepper to taste
- 1/4 C apple cider vinegar
- 3 TBS. Worcestershire Sauce
- Barbecue sauce of choice
Sliced Applesauce Bread

1. Preheat oven to 350. Grease pan 2
- 1 1/4 C applesauce
- 1 C white sugar
- 1/2 C vegetable oil
- 2 eggs
- 3 TBS. milk
- 2 C all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/4 tsp. ground allspice
- 1/4 tsp. salt
- 1/2 C chopped pecans
Caramel Apple Cake

1. preheat oven to 350. grease & flour bundt pan 2
- Caramel Glaze:
- 3 C all-purpose flour
- 1 1/3 C sugar, plus 1/4 C for apples
- 1 1/2 tsp. ground apple or pumpkin pie spice blend
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. fine salt
- 4 large golden delicious apples, peeled, cored, and roughly chopped (about 5 cups)
- 3 large eggs
- 1/2 C vegetable oil
- 1/2 C sour cream
- finely grated zest from 1 orange
- juice of 1 orange (about 1/3 C)
- 1 TBS. pure vanilla extract
- 1/2 C sugar
- 1 TBS. light corn syrup
- 2 TBS. water
- 1/2 heavy cream
- 3/4 C pecans toasted and roughly chopped
- 1/2 tsp. pure vanilla extract
- pinch of salt
Raspberry Cream Muffins

I made these delicious muffins for my family and they were a huge hit
- 1 C fresh raspberries
- 3/4 C plus 2 TBS. sugar, divided
- 1/4 butter, softened
- 1 egg
- 1/2 tsp. almond extract
- 1/2 tsp. vanilla extract
- 2 1/4 C all-purpose flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1 C half and half cream
- 1 C finely chopped vanilla or white chocolate chips
- 2 TBS. brown sugar
Paula Dean & Swan House Chicken & Rice Casserole

This casserole is served at the little tea house in our town
- 3 C diced, cooked chicken
- 8 oz. can water chestnuts, drained and chopped
- 2 14 oz. cans French green beans rinsed and drained
- 4 oz. can pimentos, rinsed and drained
- 10 3/4 oz. can condensed cream of celery soup
- 1 C mayo
- 6 oz. box Uncle Ben's Long grain wild rice, cooked according to pck.
- 1 C grated cheddar cheese or montery jack cheese
