Peanut Butter Banana Bread

- Topping:
- 1/2 C all purpose flour
- 1/2 C packed brown sugar
- 1/4 C creamy peanut butter
- 1/2 tsp. cinnamon
- Batter:
- 1/2 C butter, softened
- 1 pckg. (8 oz.) cream cheese softened
- 1 1/4 C sugar
- 2 eggs
- 1 C mashed ripe bananas
- 1 tsp. vanilla
- 2 1/4 C flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. ground cinnamon
- 1 1/2 C semisweet chocolate chips
Date and Nut Bars

I made these one year for Christmas
- 1/3 C boiling water
- 2 C dates, pitted and chopped
- 1/2 C shortening
- 1 C white sugar
- 1/8 tsp. ground cinnamon
- 3/4 tsp. salt
- 1/8 tsp. ground nutmeg
- 2 eggs
- 1 C all-purpose flour
- 1/4 tsp. baking soda
- 1/2 C chopped walnuts
- 1/4 C confectioners sugar
Mashed Potato Timbales

1. Boil, drain, then mash potatoes with butter and onions until small lumps of potatoes remain
- 2 1/2 lbs. potatoes, cubed and peeled
- 1 TBS. butter or stick margarine
- 1 TBS. grated onion
- 1 Carton (8 oz.) reduced-fat ricotta cheese
- 1 C (8 oz.) reduced-fat sour cream
- 1 tsp. salt
- 1 tsp. garlic powder
- 1/2 tsp. dried rosemary, crushed
- 1/4 tsp. pepper
- 2 egg whites
- 2 TBS. dry bread crumbs

I saw this recipe in a "Cooking Light" magazine and thought the picture looked amazingly delicious
- 2 1/2 C reduced fat milk
- 1 vanilla bean, split lengthwise
- 3/4 C sugar
- 3 TBS. corn starch
- 1/8 tsp. salt
- 1/4 C half and half
- 2 large egg yolks
- 4 tsp. butter

- ◦2 teaspoons freshly ground cinnamon (or 1 Tablespoon pre-ground)
- ◦1/4 teaspoon freshly grated nutmeg
- ◦1 teaspoon baking soda
- ◦1 teaspoon baking powder
- ◦1/2 teaspoon salt
- Wet ingredients:
- ◦2 eggs, room temperature
- ◦1/3 cup canola oil (or peanut)
- ◦3/4 cup plain yogurt
- ◦1/3 cup buttermilk (or regular milk with a splash of vinegar)
- ◦1 cup organic Turbinado sugar (or brown sugar, firmly packed)
