Morning Glory Muffins (nut free option)

Preheat your oven to 350 degrees
- 1 apple, peeled and cored, shredded
- 1 large carrot, peeled
- 1/2 cup sunflower seed butter
- 1 cup pepitas
- 3 eggs, whisked
- 1/2 cup Coconut Oil, melted
- 1/4 cup raisins
- 1/4 cup pecans, roughly chopped (optional for nut free version)
- 1 tablespoon cinnamon
- 1 tablespoon raw honey
- 1/4 teaspoon baking soda

Chicken and Apple Sausage

- 2 large chicken breasts, or use 1 lb ground chicken
- 1 apple, peeled and finely diced
- 1 Tablespoon fresh thyme leaves, finely chopped (or use 2 Tablespoons dried thyme)
- 3 Tablespoons fresh parsley, finely chopped
- 1 Tablespoon fresh oregano, finely chopped (or use 2 Tablespoons dried oregano)
- 2 teaspoons garlic powder
- salt and pepper

Pumpkin Chicken

Place 20 oz of pumpkin puree on large baking dish
- 20 oz. pumpkin puree
- 4-5 organic chicken thighs
- 2 handfuls of sliced mushrooms
- 2 handfuls of chopped butternut squash
- 15 pecans
Zucchini Pancakes – Grain-free

Heat a cast iron pan on medium high heat
- 1 cup shredded zucchini
- 2 pastured eggs
- 1 Tbsp coconut flour
- Salt and pepper to taste
- 2 Tbsp ghee or coconut oil
Shepherd's Pie (Paleo)

- 2 heads of cauliflower steamed
- OR
- 3-4 large roasted sweet potatoes
- 1 package of ground turkey
- 1 large parsnip
- 2-3 carrots
- 1 large onion
- 1 stalk of celery
- Frozen peas
- 1 cup broth
- 1 Tbsp coconut flour
- 1 tsp Apple cider vinegar
- 1 tsp Braggs
- Rosemary
- Thyme
- Sage
- Garlic
- Salt
- Pepper
Dairy Free Eggnog (Paleo)

Whisk together the egg yolks, honey, vanilla, nutmeg and cinnamon in a medium bowl until smooth
- Ingredients:
- 4-6 servings
- 2 cans of coconut milk (14 oz each)
- 6 egg yolks (save 2 egg whites for the meringue topping)
- 2-3 T honey or sweetener of choice
- 1 T pure vanilla extract
- 1 tsp nutmeg
- 1/4 tsp cinnamon
- Optional Cinnamon Spiced Meringue Topping:
- 2 egg whites
- 1 tsp maple syrup, honey or sweetener of choice
- 1/4 tsp cinnamon
- 1/8 tsp nutmeg
- Alcoholic version: Add in 8 oz spiced rum
- Additional optional toppings: toasted unsweetened coconut, additional nutmeg, cinnamon or cinnamon sticks

- 1 C apple juice
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground allspice
Baklava (Paleo)

Preheat oven to 325. Make the coconut flour pie crust: 1
- Pie Crust:
- 1/4 cup Grass Fed Butter Melted
- 2 Eggs
- 1/4 Teaspoon Sea Salt
- 3/4 Cup Coconut Flour
- Baklava Filling:
- 2 T canned pumpkin
- 1/2 cup pitted dates chopped
- 2 T honey
- 1 cup walnuts or other nuts.
- 1 T Cinnamon
- 1 t cloves
- .5 t Vanilla
- For the Syrup
- 1/2 cup honey
- 1/2 cup water
- 1 T Cinnamon
- 1 t cloves
- lemon zest to taste
Pork Chops: Brined and Grilled

In a large pot, mix all your ingredients together so that salt and honey dissolve in the water
- 4 thick cut bone in Pork Chops
- 1/2 cup of course salt
- 1/3 cup raw local honey
- 2 bay leaves (fresh or dried but I prefer fresh)
- 1 TBS crushed black peppercorns
- 3 cloves of garlic smashed – 4 if your cloves are small
- 1 medium sweet onion chopped
- 1 carrot peeled and chopped
- 1/2 tsp Crushed Red Pepper Flake (optional but trust me worth doing if you can)
- 1 to 1.5 quarts of filtered cold water (not tap water if yours is chlorinated to death like mine)
