Ingredients

  • 1 1/4 cups graham cracker crumbs
  • 5 tbsp. unsalted butter, melted
  • 1/2 cup plus 2 tbsp. sour cream
  • 2 1/2 tbsp. powdered sugar
  • 2 tbsp. heavy cream
  • 1/2 cup plus 2 tbsp. creamy peanut butter(Do not use old fashioned style, chunky or freshly ground)
  • 1/2 cup whipping cream
  • 4 oz. semisweet chocolate , chopped

Step 1

1. Mix graham cracker crumbs and butter in small bowl. Press crumb mixture on bottom and sides of 24 mini-muffin tins. Place in freezer for 20 minutes
2.Whisk sour cream, powdered sugar and 2 tbsp. heavy cream in bowl to blend. Add peanut butter and whisk till smooth.. Spoon 1 tbsp. of peanut butter mixture into each graham cracker crust- freeze for 3 hours.
3.Bring 1/2 cup whipping cream to a simmer in heavy small saucepan. reduce heat to low, add chocolate; stir until melted. Cool Completely, stirring occasionally.
4. Spoon 2 tsp. chocolate mixture over each peanut pie. Place in freezer till set.(Can be prepared 1 week ahead. Keep frozen)
5. Using tip of small sharp knife as aid, gently pry pies from tins. Arrange pies, chocolate side up on plate. let stand 10 minutes at room temperature and serve.
