Pomegranate Cocktail Syrup

1.In a saucepan, combine sugar and hot water, add the pomegranate juice and bring to a boil

- 2/3 hot water
- 2 cups pomegranate juice

1. In a soup pot, heat the extra virgin olive oilover medium high heat
- 2 tbsp extra virgin olive oil
- 1 pound sweet Italian sausage, casings removed and crumbled
- 1 onion chopped
- 6 cloves garlic, chopped
- 1 15.5 oz can Cannelli beans
- 2 bunches of escarole, washed and coarsely shredded or two 9 ounce packages of spinach
- Salt annd Pepper
- freshly grated nutmeg( optional)
- 4 cups Chicken Stock
- 2 cups water
- 3/4 cup Ditalini Pasta
- 2 tsp grated lemon peel
- Freshly grated parmesan cheese for serving
Vietnamese Beef with Garlic, Black Pepper and lime

1.In a small bowl, combine soy sauce, lime juice, sugar and fish sauce and stir till sugar is dissolved
- 2 Tbsp. soy sauce or Tamari sauce
- 2 Tbsp. fresh lime juice
- 1 1/2 tbsp. Light brown sugar
- 1 Tbsp. fish sauce
- 5-6 cloves of garlic, minced
- 3 tbsp. peanut or canola oil
- Kosher salt and freshly ground black pepper
- 1 1/2 lbs sirloin or tenderloin, cut into 3/4 inch pieces
- 1 medium yellow onion, sliced into 1/4 inch thick wedges
- 3 tbsp. chopped salted peanuts, toasted
- 2 scallions, both green and white parts, thinly sliced
Cranberry Trifle

1. In a medium sauce pan, combine cranberries, 2 cups granulated sugar,ginger and 2 cups of water
- 2 bags ( 12oz) cranberries, fresh ot frozen
- 2 1/4 cups sugar
- 2 tbs freshly grated ginger
- 8 oz cream cheese, at room temperature ( 1 bar)
- 1/4 cup packed light browned sugar
- 1/2 tsp vanilla
- 2 cups heavy cream
- 2 all butter pound cakes ( 12oz each) cut into 3/4 inch slices
Feta Cheese Mediterranean Salad

1. In a large container with a lid, place thyme, lemon juice, olive oil, vinegar and shallots
- 1 tbsp. dried thyme
- 1 tbsp. lemon juice
- 1/4 cup olive oil
- 1/2 cup red wine vinegar
- 1 tsp. salt
- 1 shallot, chopped
- 1 can sliced black olives

Preheat the oven to 350 degrees
- Icing:
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 3 eggs
- 1/2 cup sugar
- 1/2 cup vegetable oil
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon pure almond extract

- 1 tablespoon egg white
- 3 cups confectioners' sugar
