  • 2 pounds Fingerling potatoes
  • 4 sprigs oregano
  • 1 tablespoon extra virgin olive oil
  • Coarse salt annd pepper
  • 1 tablespoon lemon juice

Step 1

Preheat oven to 450
1. On a rimmed baking sheet, toss potatoes with oregano sprigs and olive oil, Season with coarse salt and ground pepper. Arrange in a single layer and raost till potatoes are tender when pierced with a knife approx 30 minutes. Tossing halfway through. transfer too serving bowl and toss with lemon juice
