K's Ravioli Bolognese

Mouthwatering hearty meat sauce with pasta, mushrooms, sausage, beef and cheese
- 1 1/2 pounds lean ground beef
- 1/2 pound Italian sausage
- 1 onion, chopped
- 8 ounces mushrooms, chopped
- 2 cloves garlic
- 1 (28-ounce) jar Classico Sauce with Italian Sausage
- 1/2 (28-ounce) jar Bertolli Rustic Cut Marinara sauce
- 1 (14-ounce) can tomatoes, diced
- 1/3 cup red wine
- 1/2 tablespoon oregano
- 1/2 tablespoon Italian Seasoning
- Black pepper to taste
- Parmesan cheese
- 1 (20-ounce) package Buitoni refrigerated 4 cheese ravioli
- 1 (9-ounce) package Buitoni refrigerated 4 cheese ravioli
Tomato Gratin

Adjust oven racks to lower middle and upper middle positions and heat oven to 450
- 3 lbs. plum tomatoes, cored and sliced into 1/4" thick rings
- Salt and pepper
- 1/2 tsp. sugar
- 1 cup panko bread crumbs
- 1 cup grated Parmesan cheese
- 1/4 cup olive oil
- 1 lb. onions, halved and sliced thin
- 1 T. chopped fresh thyme
- 2 garlic cloves, minced
Big Easy Hoppin Johns

Sauté diced onion in bacon drippings in a large skillet over medium-high heat 5 minutes or until golden
- 1 cup diced sweet onion
- 2 tablespoons bacon drippings
- 1 (8.5-oz.) package ready-to-serve jasmine rice
- 2 cups cooked and drained black-eyed peas
- Salt and pepper to taste
Deluxe German Potato Salad

•In a large skillet, cook bacon over medium heat until crisp
- 1/2 pound sliced bacon, diced
- 1 cup thinly sliced celery
- 1 cup chopped onion
- 1/2-3/4 cup sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 3/4 teaspoon ground mustard
- 1 cup cider vinegar
- 1/2 cup water
- 5 pounds unpeeled small red potatoes, cooked and sliced
- 2 medium carrots, shredded
- 2 tablespoons minced fresh parsley
- Additional salt, optional
Mini Muffulettas

1. Spread 1 Tbsp. olive salad evenly over each cut side of roll bottoms
- 1 (32-oz.) jar Italian olive salad
- 12 small deli rolls, cut in half
- 12 thin Swiss cheese slices
- 12 thin deli ham slices
- 12 thin provolone cheese slices
- 12 Genoa salami slices
Spinach Pesto Chicken Breasts

Preheat oven to 375. Mix spinach and pesto together; set aside
- 1-1/2 cups (2 oz) chopped fresh spinach (packed)
- 2 T. basil pesto
- 1/3 cup diced onion
- 1/3-1/2 cup sliced mushrooms
- 1/4 cup sun-dried tomatoes in oil, coarsely chopped
- 2 boneless, skinless chicken breast halves
- 2-3 T. grated Parmesan cheese
Skillet Barbecued Pork Chops

1. Whisk barbecue sauce and vinegar in small bowl
- 3/4 cup barbecue sauce
- 2 tablespoons cider vinegar
- 3 tablespoons brown sugar
- 1 tablespoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon cayenne pepper
- 4 bone-in rib or center-cut pork chops (see note)
- 1 tablespoon vegetable oil
