Syd's Cranberry Sauce

- 1 apple, peeled, cored and cubed
- 1/2 cup apple sauce
- 1/4 cup sugar

Shrimp Casserole

- 1 1/2 cups uncooked long-grain rice
- 1 1/2 pounds medium-size raw shrimp
- 1/2 cup butter
- 1 green bell pepper, chopped
- 1 onion, chopped
- 3 celery ribs, chopped
- 2 garlic cloves, minced
- 4 green onions, chopped
- 2 (10 3/4-oz.) cans cream of shrimp soup, undiluted*
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1 cup (4 oz.) shredded Cheddar-colby cheese blend
- 1/4 cup fine, dry breadcrumbs
Roasted Potato Salad W/Mustard Dressing

Preheat oven to 400°. Combine first 4 ingredients in a large bowl; toss to coat
- 3 pounds small red potatoes, cut into 1-inch pieces
- 1 tablespoon olive oil
- 2 teaspoons freshly ground black pepper
- 1/2 teaspoon kosher salt
- 2 bacon slices (uncooked), chopped
- 2 cups diced Vidalia or other sweet onion (about 2 medium)
- 2 garlic cloves, minced
- 3 tablespoons Dijon mustard
- 2 tablespoons reduced-fat mayonnaise
- 1 1/2 tablespoons honey
- 1 1/2 tablespoons sherry vinegar
- 1/4 cup chopped fresh parsley
Black Bean Empanadas

directions Heat the oven to 375°F
- 2 pkg. (17.3 ounces each) Pepperidge Farm® Puff Pastry Sheets (4 sheets), thawed
- 1 egg
- 1 tbsp. water
- 1/2 lb. ground pork
- 1 small red pepper, diced (about 2/3 cup)
- 4 medium green onions, chopped (about 1/2 cup)
- 1 clove garlic, minced
- 1/2 cup tomato sauce
- 1 tsp. ground cumin
- 1 tsp. chili powder
- 1/8 tsp. crushed red pepper
- 1 1/2 cups shredded Cheddar cheese (about 6 ounces)
- 1 can (about 15 ounces) black beans, rinsed and drained
- 1/4 cup chopped fresh cilantro leaves
- 1 cup sour cream
- 1 cup guacamole
Mini Barbecue Chicken Pizzas

•In a large nonstick skillet, saute onion in oil until tender
- 1 medium onion, chopped
- 2 teaspoons olive oil
- 1-1/2 cups shredded cooked chicken
- 2/3 cup barbecue sauce
- 1 can (4 ounces) chopped green chilies
- 1-1/2 teaspoons garlic powder
- 1/4 teaspoon pepper
- 1 package (13 ounces) whole wheat English muffins, split
- 1-1/2 cups (6 ounces) shredded part-skim mozzarella cheese
Corn & Black Bean Salad

Cut corn of ears and saute in small amount of olive oil along with red onion slices
- 4 ears of corn (or 4 cups frozen corn, thawed)
- Red onion, sliced
- 1 can black beans,rinsed & drained (can also use cannellini beans)
- 20 or so grape tomatoes, halved
- 1/2 yellow pepper, diced
- 1/2 red pepper, diced
- Juice of 1 or 1-1/2 limes
- Fresh basil
- 4 T. (or more) red wine vinegar
- Salt & pepper to taste
- Chopped green onions
Sausage Cheese Balls

•In a small bowl, combine the first six ingredients
- 1/2 cup shredded cheddar cheese
- 3 tablespoons biscuit/baking mix
- 1 tablespoon finely chopped onion
- 1 tablespoon finely chopped celery
- 1/8 teaspoon garlic powder
- 1/8 teaspoon pepper
- 1/4 pound bulk pork sausage
- Sweet-and-sour and barbecue sauce, optional
Antipasto Picnic Salad

Cook pasta according to package directions
- DRESSING:
- 1 package (16 ounces) medium pasta shells
- 2 jars (16 ounces each) giardiniera
- 1 pound fresh broccoli florets
- 1/2 pound cubed part-skim mozzarella cheese
- 1/2 pound hard salami, cubed
- 1/2 pound deli ham, cubed
- 2 packages (3-1/2 ounces each) sliced pepperoni, halved
- 1 large green pepper, cut into chunks
- 1 can (6 ounces) pitted ripe olives, drained
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 2 tablespoons lemon juice
- 1 teaspoon Italian seasoning
- 1 teaspoon coarsely ground pepper
- 1/2 teaspoon salt
Light Italian Dressing

Rub the cut sides of the tomato along the coarse holes of a grater into a bowl; discard the skins
- 1 med. tomato, halved
- 1 T. red wine vinegar
- 1 T. fresh lemon juice
- 2 tsp. Dijon mustard
- Pinch of sugar
- 2 T. olive oil
- 1/2 small clove garlic, minced
- 1/8 tsp. oregano
- 1/8 tsp. basil
- 1/4 tsp. salt
- Pepper to taste
