Orzo Salad

Cook orzo in a pot of boiling salted water according to package directions; drain and transfer to a large bowl
- COOK:
- 8 oz. dry orzo
- ADD:
- 2 cups sliced fresh spinach
- 1 ⁄2 cup diced roasted red peppers
- 1 ⁄2 cup diced part-skim mozzarella
- 1 ⁄4 cup sliced scallions
- 2 Tbsp. pine nuts, toasted
- WHISK:
- 2 Tbsp. each fresh lemon juice and extra-virgin olive oil
- 1 Tbsp. red wine vinegar
- Salt and black pepper to taste
Hushpuppies

1. MAKE BATTER Combine cornmeal, flour, baking powder, baking soda, salt, and cayenne in large bowl
- Avoid coarsely ground cornmeal, which will make the hushpuppies gritty. If you don't have buttermilk, whisk 1 1/2 teaspoons lemon juice into 3/4 milk and let it stand for 10 minutes.
- Ingredients
- 3/4 cup cornmeal (see note)
- 1/2 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 3/4 cup buttermilk (see note)
- 2 large eggs
- 1/4 cup minced onion
- 2 quarts peanut or vegetable oil
Low-Fat New England Clam Chowder

1. Cook bacon in Dutch oven over medium-low heat until browned, about 10 minutes
- 2 slices bacon, chopped fine
- 1 onion, chopped fine
- 2 garlic cloves, minced
- 1/4 teaspoon dried thyme
- 1 pound russet potatoes, peeled and cut into 1/2-inch chunks
- 1/4 cup white wine
- 2 bay leaves
- 4 (6.5-ounce) cans chopped clams, drained and juices reserved
- 3/4 cup instant potato flakes (see note)
- 1 tablespoon cornstarch
- 1 (8-ounce) bottle clam juice
- 3/4 cup fat-free half-and-half
- 1 tablespoon chopped fresh parsley leaves
- Salt and pepper
Blackened Tilapia Baja Tacos

1. Combine first 4 ingredients in a food processor; process until smooth
- 1/4 cup reduced-fat sour cream
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons fresh lime juice
- 1 jalapeño pepper, seeded and chopped
- 1 cup thinly sliced white onion
- 1 1/2 teaspoons paprika
- 1 1/2 teaspoons brown sugar
- 1 teaspoon dried oregano
- 3/4 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground red pepper
- 4 (6-ounce) tilapia fillets

Slow Cooker Green Bean Casserole

1. MAKE SAUCE Pulse canned fried onions in food processor until finely ground; set aside

- 1 cup canned fried onions (see note)

- 10 ounces cremini or white mushrooms , cut into 1/4-inch-thick slices
- Salt and pepper
- 4 garlic cloves , minced
- 1/2 teaspoon dried thyme
- 1/4 cup all-purpose flour
- 1 1/4 cups low-sodium chicken broth (see note)
- 1 1/4 cups heavy cream
- 2 pounds green beans , trimmed and cut into 1-inch pieces

- 3/4 cup flour
- 3/4 tsp. baking powder
- 1/2 tsp. garlic powder
- 3/4 cup milk

- 4 oz. low-fat sausage, cooked & drained

- 1 1/4 pounds unpeeled, medium-size raw shrimp (31/40 count)
