Havarti Vegetable Lasagna Rolls

Heat oil in a large skillet over medium heat
- Simple Tomato Basil Sauce:
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 1 small green pepper, seeded and finely chopped
- 2 cloves garlic, finely minced
- 1 yellow squash, finely chopped
- 1 zucchini squash, finely chopped
- 1 small head radicchio, cored and very thinly sliced
- Salt and pepper to taste
- 3 cups (12 ounces) shredded Wisconsin Havarti cheese
- 9 cooked lasagna noodles
- 1/2 cup (1 1/2 ounces) grated Wisconsin Parmesan cheese
- 1 can (16 ounces) peeled tomatoes, chopped, with juice
- 1 tablespoon finely chopped basil
- 1 teaspoon sugar
- Salt and pepper to taste

Garlic Chicken Fried Chicken

1.In a shallow dish, mix together the garlic powder, pepper, salt, paprika, bread crumbs and flour
- 2 teaspoons garlic powder, or to taste
- 1 teaspoon ground black pepper
- 1 teaspoon salt
- 1 teaspoon paprika
- 1/2 cup seasoned bread crumbs
- 1 cup all-purpose flour
- 1/2 cup milk
- 1 egg
- 4 skinless, boneless chicken breast halves - pounded thin
- 1 cup oil for frying, or as needed
Broccoli and Cashew Crunch

- 1/4 cup grated Parmesan cheese
- 1/4 cup salted cashews, lightly chopped
- Zest of 1 lemon
- 1/4 teaspoon garlic powder
- Kosher salt
- 1 pound fresh broccoli, florets removed and separated
- 2 tablespoons melted butter
- Freshly ground black pepper
Cilantro, Pine and Walnut Pesto

Blend all ingredients (except oil) together in a food processor until mixed and chopped well
- 2 cups cilantro, chopped and packed tightly
- 1/2 cup parm/reggiano
- 1/4 cup pine nuts, toasted
- 1/4 cup walnuts, toasted
- 1 T minced garlic
- 1/4 t salt
- 1/4 t cayenne
- 1/3 cup extra virgin olive oil
Frothy Orange Drink

combine all ingredients in blender and mix well
- 1 can (6 oz) frozen orange juice, unthawed
- 1 cup milk
- 1 cup water
- 1/2 cup sugar
- 1 tsp. vanilla extract

- 1/3 cup mayonnaise
- 1 garlic clove, minced
- 9 slices extra-thin white bread slices
- 3 plum tomatoes, sliced
- 12 fresh basil leaves
Watermelon Mint Raspberry Salad

- 4 cups (about 2 lbs) of seeded and cubed watermelon
- 1/3 c minced fresh mint
- 3 c fresh raspberries
- 1 Tbsp honey
