Apple Bacon Walnut Salad

Microwave the bacon according to directions to re-crisp
- Slaw Dressing
- 12 pieces Bacon, pre-cooked and crumbled
- 1 pkg. (16 oz.) Classic Coleslaw mix
- 2 Granny Smith apples, diced
- 1 tbsp. Caraway seeds
- 1/4 tsp. Freshly ground black pepper
- 1 cup Walnut pieces
- 1/2 cup Crumbled blue cheese
Spiced Tomato Soup

In pot, cook first 6 ingredients over medium, stirring, until onion softens, 12 minutes
- 1 1/2 cups chopped red onion
- 1/4 cup olive oil
- 2 1/2 tablespoons grated fresh ginger
- 1 1/2 tablespoons ground coriander
- 2 cloves garlic, minced
- 1/4 teaspoon crushed red pepper
- 2 1/4 cups chicken stock
- 1 28 ounce can crushed tomatoes
- 1/2 cup finely chopped cilantro

- 1/2 tsp. onion powder

- For asparagus:
- 48 asparagus spears
- 3 cups ice
- 6 cups water

Italian Wedding Soup

1.In a medium bowl, combine the beef, egg, bread crumbs, cheese, basil and onion
- 1 pound extra-lean ground beef
- 2 eggs, beaten
- 1/4 cup dried bread crumbs
- 2 tablespoons grated Parmesan cheese
- 1 teaspoon dried basil
- 3 tablespoons minced onion
- 2 1/2 quarts chicken broth
- 2 cups spinach - packed, rinsed and thinly sliced
- 1 cup seashell pasta
- 3/4 cup diced carrots
Pico de Gallo

Combine all the ingredients and let sit for about 15 minutes
- 4 large ripe tomatoes, seeded and chopped
- 1/2 cup chopped cilantro
- 1/3 cup chopped red onion
- 1/3 cup chopped green onion
- 3 jalapenos, seeded and chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh lime juice
- Salt and pepper to taste

Bring a large pot of water to a boil, salt it, add the pasta and cook until al dente

- 1 pound whole wheat or whole grain spaghetti

- 3/4 pound mixed mushrooms (such as shiitake, hen-of-the-woods or maitake), thinly sliced
- 1/4 head savoy cabbage, shredded (4 cups)

- 1 small red chile pepper, thinly sliced
- 3 - 4 cloves garlic, chopped or thinly sliced
- 1 1-inch piece fresh ginger, grated
- 1 pound shelled and deveined medium shrimp
- 1 About 1 tsp chinese five-spice powder
- 2 cups vegetable or chicken stock
- 1/4 cup tamari (or liquid amino)
