Pesto - Best Recipe Ever!

Place the toasted nuts, garlic, basil, parsley, oil and 1/2 tsp salt n a food processor adn process until smooth
- 1/4 cup pine nuts (maybe onlly use 1/8 cup), toasted
- 3 medium garlic cloves
- 2 cups packed basil
- 2 T fresh parsley
- 7 T EVO
- Salt, to taste
- 1/4 cup grated parmesan
Green Onions & Rings Soup with Mini White Pizzettes

Preheat the oven to 400 degrees
- PIZZETTES
- 1 sheet (about 1/2 lb.) frozen puff pastry, such as Dufour, thawed
- 1 10 ounce box frozen chopped spinach, thawed and squeezed dry
- 1/2 cup fresh ricotta
- 2 tablespoons chopped flat-leaf parsley
- 1 tablespoon lemon zest
- 2 large cloves garlic, chopped
- A pinch freshly grated or ground nutmeg
- Salt and pepper
- 1 8 ounce ball fresh mozzarella, grated
- 1/4 cup grated Parmigiano-Reggiano
- SOUP
- 3 tablespoons EVOO
- 3 leeks-trimmed, sliced crosswise 1/2 inch thick and thoroughly rinsed

In a medium saucepan, bring 2 cups milk, the whole garlic cloves, bay leaves and 14 tsp
- 2 cups milk, plus more if needed
- 2 head garlic, cloves separated and peeled, plus 4 tbsp sliced garlic (about 6 large cloves)
- 4 bay leaves, preferably fresh
- coarse salt
- 5 tablespoons EVOO
- 1 1/2 - 2 pounds broccoli

- 1 (15 oz) can peaches in pear juice, fruit chopped and juice reserved

- 1 sheet frozen puff pastry (1/2 of 17.3-ounce package), thawed according to package directions
- 1 teaspoon Dijon mustard
- 4 Jones Country Carved deli thin slices, or 1/2 cup finely diced Jones Farm Fresh & Tender Dainty Ham or Ham Steaks
- 1/2 cup (2 ounces) shredded Wisconsin Gruyère or Swiss Cheese

- 1 medium-size firm eggplant

- 1 pound sweet Italian sausage with fennel seed, casings removed
- 1 small onion, finely chopped
- 1 rib celery, finely chopped
- 3 - 4 cloves garlic, finely chopped

- 1 pound penne rigate or whole-grain penne rigate
