Upside Down Apple Tart

1. Freeze 1 cup cut-up butter 30 minutes
- 1 cup cold butter, cut up
- 2 cups all-purpose flour
- Pinch of salt
- 1 3/4 cups sugar, divided
- 1/2 cup ice-cold water
- 1 (3-lb.) package small Granny Smith apples, peeled and quartered
- 1/2 cup butter, cut up

French Potato Salad

- 1 recipe pastry
- 1 cup sugar
- 2 tbs flour

- 3 cups thinly sliced peaches
- 3 cups sliced, peeked and seeded mangoes
- 2 tsp fresh lime juice
- 1 egg white
Grilled Balsamic Pork Tenderloin

- 1/4 cup balsamic vinegar
- 2 garlic cloves, minced
- 1/2 tsp dried crushed red pepper
- 1 (2-pound) package pork tenderloins

- 1 tsp freshly ground black pepper
- Garnish: rosemary sprigs
Turkey Chili

In a large skillet, saute turkey, onions, garlic and chili powder
- 1 lb ground turkey
- 1 cup onions, sliced
- 1 large garlic clove, crushed
- 1 tbs chili powder
- 1 (16 oz) can Mexican style stewed tomatoes, undrained
- 1 can kidney bean, drained
- 1 1/3 cup frozen corn
