Chicken Wild Rice Soup for 2 (2017)

Heat olive oil in a large pot over medium high
- 1 tablespoon olive oil
- 1/2 onion , chopped
- 2 cloves garlic , minced
- 1 teaspoon poultry seasoning
- 1/2 cup celery , sliced
- 1/2 cup carrots
- 1 tablespoons flour
- 4 cups chicken broth
- 1 cups cooked chicken
- 1/2 cup wild rice
- 1 cups mushrooms
- salt and pepper to taste
Easy Tomato Soup & Grilled Cheese Croutons

In a large pot or Dutch oven such as Le Creuset, heat the olive oil over medium heat
- 3 tablespoons good olive oil
- 3 cups yellow onions, chopped (2 onions)
- 1 tablespoon minced garlic (3 cloves)
- 4 cups chicken stock, preferably homemade
- 1 (28-ounce) can crushed tomatoes, preferably San Marzano
- Large pinch of saffron threads
- Kosher salt and freshly ground black pepper
- 1/2 cup orzo
- 1/2 cup heavy cream
- Grilled Cheese Croutons (see below)
Classic French Onion Soup

Sweat onions and garlic in oil covered, in a Dutch oven, 10 minutes
- 2 each yellow, white and red onions, sliced (about 12 cups)
- 1/4 cup minced fresh garlic
- 1/4 cup olive oil
- 1 cup dry white wine
- 1/3 cup dry sherry
- 3 tbs flour
- 3 cups each chicken and beef broth 3 sprigs fresh thyme
- salt and pepper
- 6 baguette slices, 1/2 inch thick
- 1 cup shredded Gruyere cheese
- 1/2 cup shredded Parmesan
Fiesta Chicken Tortilla Soup

Simmer broth, turkey, black beans, corn and salsa for 10 minutes
- 4 (14 1/2 oz) cans chicken broth
- 3 cups shredded chicken
- 1 (15 oz) can black beans, rinsed and drained
- 1 (15 1/4 oz) can whole kernel corn
- 1/2 cup medium salsa
- 5 6 inch corn tortillas
- Shredded Mexican Cheese
Chocolate Truffle Cake

In a large saucepan, cook the milk, butter and chocolate over low heat until melted
- 2 1/2 cups milk
- 1 cup butter, cubed
- 8 oz semisweet chocolate, chopped
- 3 eggs
- 2 tsp vanilla
- 2 2/3 cups flour
- 2 cups sugar
- 1 tsp baking soda
- 1/2 tsp salt
- Filling
- 6 tbs butter, cubed
- 4 oz bittersweet chocolate, chopped
- 2 1/2 cups confectioners' sugar
- 1/2 cup heavy whipping cream
- Ganache
- 10 oz semisweet chocolate, chopped
- 2/3 cup heavy whipping cream
Fresh Corn & Arugula Salad Recipe

- BASIL VINAIGRETTE:
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 3 tablespoons minced fresh basil
- 1 teaspoon chopped shallot
- 1 teaspoon minced fresh rosemary
- 1 teaspoon lemon juice

- 1 cup (packed) dark brown sugar

- 1/3 cup water
- 2 tbs brown sugar
