Parmesan Potato Balls

Place potatoes in a large saucepan and cover with water
- 3 large potatoes, peeled and cubed
- 2 ounces cream cheese, softened
- 2 tbs milk
- 1 tbs butter, softened
- 1/4 cup grated Parmesan cheese
- 1 tbs chopped green onion
- 2-1/2 tsp onion soup mix
- 1/2 tsp salt
- 1/8 tsp hot pepper sauce
- Dash pepper
- 1 egg, beaten
- 1-1/2 cups crushed cornflakes
Grilled Margherita Sandwiches

Rub both sides of each bread slice with garlic
- 4 (1/2-inch) slices crusty Italian bread
- 1 large garlic clove, quartered
- 4 to 6 thin slices whole-milk mozzarella cheese (about 3 oz.)
- 1 large plum tomato, thinly sliced
- 2 tablespoons thinly sliced fresh basil
- 1/2 teaspoon garlic-pepper seasoning
- 2 tablespoons extra-virgin olive oil

Mix all ingredients in the bread machine on dough cycle
- 3/4 cup warm water (105° to 115°)
- 1 envelope active dry yeast
- 2 cups (or more) all purpose flour
- 1 tsp sugar
- 3/4 tsp salt
- 3 tbs olive oil
Red wine & Mushroom Sauce

Sweat onion and garlic in oil in a saucepan over medium heat until onion softens, 4 minutes
- 1/2 cup minced onion
- 1 tbs minced garlic
- 1 tbs vegetable oil
- 2 cups dry red wine
- 1/2 cup mixed dried mushrooms
- 1 cup ketchup
- 4 tsp worcestershire sauce
- 1 tsp prepared horseradish
- salt and pepper to taste
Two Toned Cheesecake

In a bowl, combine cracker crumbs, sugar and butter
- Filling:
- 1-1/2 cups chocolate graham cracker crumbs
- 6 tbs sugar
- 6 tbs butter, melted
- 4 packages (8 ounces each) cream cheese, softened
- 1 3/4 cups sugar
- 3/4 cup heavy whipping cream
- 4 eggs, lightly beaten
- 6 squares (1 ounce each) semisweet chocolate, melted and cooled
- Topping:
- 4 squares (1 ounce each) semisweet chocolate, finely chopped
- 1/2 cup heavy whipping cream
Warm Spinach, Mushroom and Goat Cheese Salad

Cook bacon in large skillet over medium heat until brown and crisp
- 6 bacon slices, chopped
- 1 large red bell pepper, cut lengthwise into thin strips
- 12 ounces crimini (baby bella) mushrooms, coarsely chopped
- 10-ounce bag spinach leaves
- 1/2 medium-size red onion, cut into paper-thin slices
- 2/3 cup olive oil
- 1/3 cup white wine vinegar
- 2 tablespoons sugar
- 4 ounces chilled soft fresh goat cheese, crumbled (about 1 cup)
