Lemon Pudding Cheesecake

1. Stir cheese until very soft, blend in 1/2 C milk
- 1 8 oz pkg cream cheese
- 2 C milk
- 1 pkg instant lemon pudding
- 1 8 in graham cracker crust, baked

Chocolate Bread Pudding with Bourbon Butter Sauce

Place bread cubes in large bowl and toss with milk until bread is moistened
- 1 quart whole milk
- 12 cups stale French bread, diced in 1-inch cubes
- 3 eggs, beaten
- 1 3/4 cups sugar
- 1 tablespoon vanilla
- 1 teaspoon cinnamon
- 6 ounces dark or bittersweet chocolate, chopped in large chunks
- 3 tablespoons unsalted butter, melted
- For Sauce
- 8 ounces butter
- 2 cups sugar
- 1/2 cup Woodford Reserve Bourbon
- 2 eggs
Pan Fried Pork Medallions w Rosemary

Dredge pork in flour. Brown 2 minutes on a side
- 1/2 c flour
- 1/4 t pepper
- 2 lb pork tenderloin rounds
- 1/4 c olives
- 1 1/2 c chicken broth
- 1 T white wine vinegar
- 2 T scallions
- 1 T minced rosemary
- 2 T in salted butter
- 1/2 t black pepper
Herbed Zucchini and Squash

1.Combine oil and herbs. Season with salt and pepper
- 1/4 C Olive Oil
- 1 1/2 t Oregano
- 1 1/2 t Rosemary
- 1 1/2 t Thyme
- 4 sm. Zucchini, halved lengthwise
- 2 sm. Yellow crookneck Squash, halved lengthwise
Roasted Lemon Chicken

- 1 3-4 lb. roasting chicken
- 1 Lemon, sliced
- 1 Medium onion, quartered
- 1 T Olive Oil, more if needed

1. Heat oil in large saucepan over medium-high heat
- sp. extra virgin coconut oil, melted
- 1 medium onion, chopped
- 1 medium green bell pepper, chopped
- 1 medium red bell pepper, chopped
- 2 cloves garlic, finely chopped
- 1 lb. cooked 93% lean ground turkey breast (or lean grass-fed ground beef)
- 2 cans kidney or pinto beans, rinsed and drained (I use a can of each)
- 1 (15 oz) can organic, diced tomatoes, no salt added
- 1 cup red wine
- 1 Tbsp. ground chili powder
- 1/2 tsp sea salt
- 2 tsp crushed red pepper (optional)
- 1/4 cup chopped fresh cilantro
- 6 tsp crumbed goat cheese

- 2 2/3 brown sugar

- 16 oz. pumpkin
- 2/3 C water
- 3 1/3 C flour
- 2 t baking soda
- 1 1/2 t salt
- 1/2 t baking powder
- 1 t cinnamon
- 1 t cloves
- 2/3 to 1 C nuts, chopped
- 2/3 to 1 C raisins
