1. Cook pasta according to package directions, omit salt and fat
- 8 oz uncooked orecchiette pasta
- 3 thick sliced bacon, diced
- 1 lb Brussels sprouts, trimmed and separated leaves
- 3 cloves garlic, sliced thin
- 1 T lemon rind, grated
- 1 T lemon juice
- 2 t unsalted butter
- 1/4 t salt
- 1/4 t pepper
- 1/8 t crushed red pepper
Grandma's Banana Cake Bread

1. Prepare pudding by box directions
- 1/2 C nuts, chopped
- 1 box vanilla instant pudding
- 4 eggs
- 1 C water
- 1 pkg yellow cake mix
- 2 overripe bananas
- 1/4 C oil
Pork Scaloppini with Rosemary

1. Slice tenderloin, pound thin
- 1 lb. Pork tenderloin
- 3 T Olive oil
- 3 Clove of garlic, minced
- 1 T Rosemary, fresh (or 1 t dried)
- 1/4 ¼ C White wine, dry
- 1/2 ½ C Chicken stock
- 2 Large plum tomatoes, diced
- 16 Black Olives
- 2 T Lemon Peel, minced
Pork Tenderloin in garlic sauce

1. Dredge pork patties in flour, brown well in oil
- 1 1/4 1 ¼ lb. Pork tenderloin sliced into patties
- 2 T Oil
- 1 C Seasoned flour
- 1 Onion, small, chopped
- 1 Clove of garlic, pressed
- 1 1/2 1 ½ C Chicken broth
Coconut Curry Pumpkin Bisque

In a large soup pot, heat oil over medium-high heat
- 1 tsp cocunut oil
- 1 large shallot(s), minced
- 1 1⁄2tsp kosher salt
- 2 tsp minced ginger
- 1 tsp minced garlic
- 1 tspcurry powder
- 1 ⁄ 2 tsp ground coriander leaf
- 1 ⁄2 tsp ground cumin
- 1 ⁄4 tsp ground cinnamon
- 1 punch cayenne pepper
- 30 oz pumpkin puree, canned
- 2 cup(s) canned low-sodium chicken broth
- 1 cup light, unsweetened coconut milk
- 2 T brown sugar
- 1 T lime juice
- 6 tsp cilantro, fresh, chopped
Hush Cornmeal Puppy

1. Mix to stiff batter with sweet milk
- 2 C cornmeal
- 1 t baking powder
- 1 t salt
- 4 T flour

- 15 oz. Cherry Pie Filling
- 3 oz. Lemon Jello
- 3 oz. Cream Cheese
- 1/3 C Mayonnaise
- 10 oz. Crushed pineapple
- 1 C Whipped cream
- 2 T Walnuts, chopped
Spice Cake

1. Cream butter with sugar, add eggs, beat well
- 3/4 Shortening
- 1 t Cinnamon
- 1 1/4 C Brown Sugar
- 3/4 t Nutmeg
- 1 C Sugar
- 1/2 t Ground Cloves
- 3 Eggs
- 1 t Salt
- 1 C Flour
- 1 1/2 C Buttermilk
- 1 1/2 t Baking Soda
Hoppin’ John and Greens

1. Lightly cover bottom of fry pan with olive oil
- 1 T e.v. olive oil
- 1 large Onion, diced
- 1 large Garlic Clove
- 1/2 lb. Smoked Ham, diced
- 1 or 2 27 oz can Seasoned Mixed Greens, drained and pressed
- 1 can Blackeyed peas, drained and pressed
- 1 cube Chicken Bouillon
- 2 T Salsa
- 6 oz Shredded Parmesan Cheese
Pear, Beets, Goat Cheese and Walnut Salad

1.Combine vinegar honey, Dijon, salt and pepper
- 2 T Balsamic Vinegar
- 1 t Honey
- 1/2 t Dijon mustard
- 1/4 t Salt
- 1/8 t Pepper
- 1/4 C Canola oil
- 4-5 pcs. Bacon, fried and crumbled
- 15 oz. Beets, cooked, chopped and chilled
- 13 oz. Pears, diced (or use 1 fresh pear)
- 3 oz. Goat Cheese
- 1/4 C Sugared walnuts
- Salad greens
