Jamaican Rice and Red Beans

1 Heat the oil in a medium pot over medium-high heat
- 2 Tbsp vegetable oil
- 1/2 yellow onion, chopped
- 4 garlic cloves, chopped
- 2 cups long-grain rice
- 1 teaspoon salt
- 1 teaspoon grated fresh ginger
- 1 cup water
- 1 cup chicken stock (or vegetable stock for vegetarian option)
- 2 cups coconut milk
- 1 15-ounce can kidney beans, rinsed and drained
- 2 teaspoons dried thyme
- 1 whole Scotch bonnet chile (can substitute a whole habanero)
- Lime (optional)
Beef Stew

Chris' Boy Scout Camping recipe
- 3 lbs. Beef for stew
- 1 C Seasoned flour (I use a mix of 1 C flour with 1 T salt, 1 T paprika, and 1 t pepper.)
- 1 Onion, medium, diced
- 3 C Water
- 1 T Worcestershire sauce
- 3 t Kitchen Bouquet
- 3 T Catsup
- 4 each Potatoes + Carrots, pared and cubed

Quick and easy
- TOPPING:
- 1 egg, Beaten
- 1/2 C sugar
- 1/2 C Milk
- 2 T Shortening, melted
- 1 C Flour
- 1 1/2 t baking powder
- 1/2 t salt
- 1/3 C sugar
- 1/4 C flour
- 1 t cinnamon
- 3 T butter
Eggs Hard Boiled

Place eggs into a saucepan and pour in cold water to cover; place over high heat

Orange Ginger Chicken

Save step 2 by using a prepared Asian sauce, just add ginger
- 4 Boneless Chicken Breast
- 3/4 ¾ C Seasoned flour
- 2 T Olive Oil
- 1/2 ½ C Orange Juice
- 1/4 ¼ C Lemon Juice
- 2 T Honey
- 1 1/2 1 ½ t Soy Sauce
- 1/2 ½ t Ginger
- 1 Orange, sectioned or slice
Bourbon Sauce for Bread Pudding

1. Combine all ingredients in a saucepan
- 1 cup granulated sugar
- 6 Tbsp. butter, melted
- 1/2 cup buttermilk
- 1 Tbsp. bourbon
- 1/2 tsp baking soda
- 1 Tbsp. white corn syrup
- 1 tsp. vanilla

- 1 1/4 cups sifted confectioners' sugar
- 1 tablespoon instant coffee powder
