Sesame Lettuce Salad

1.Toast sesame seed in skillet, reserve
- 2 T Sesame Seed
- 1/2 C Mayonnaise
- 1/2 C French dressing
- 2 T Parmesan
- 1 T Sugar
- 1 T Vinegar
- 1/2 t Salt
- 1 Head of Lettuce
- 1/2 C Green pepper
- 2 Green Onions, chopped
- 11 oz. Mandarin Orange
- 1/2 Cucumber, chopped
Chocolate sandwich wafer cookie

- FOR THE WAFERS:
- 1 1/2 cup All Purpose flour
- 3/4 cup organic unsweetened cocoa
- 1 cup sugar
- 1/4 teaspoon sea salt
- 1/4 teaspoon baking soda
- 1 3/4 sticks butter
- 4 tablespoon milk
- 1 teaspoon vanilla extract

- FOR THE GANACHE AND FILLING:
- 18 ounce bitter sweet chocolate

Orange Cookies

1. Beat together sugar, shortening, eggs, sour milk, orange juice and rind
- Cookie:
- 2 C sugar
- 1 C + 3 T shortening
- 2 eggs
- 1 C sour milk
- Juice and grated rind of 1 orange
- 1/2 t salt
- 1/2 t baking soda
- 4 - 5 C flour
- Frosting:
- 1 box confectioners sugar
- juice and greated rind of 1 orange
- 1 1/2 T melted butter
Chicken Fried Steak

Add the oil to a large heavy bottomed skillet, over medium heat
- 3/4 cup vegetable oil
- 1 1/2 pounds beef round, trimmed and cut into 4 (6-ounce) pieces (butcher can do)
- 1 1/2 cups all-purpose flour, divided
- Kosher salt and freshly ground black pepper
- 3 eggs, beaten with 2 tablespoons water
- 2 cups milk
Blueberry Sheet Cake

1. Mix all topping ingredients together and set aside
- Cake:
- 1/2 C margarine
- 2 C sugar
- 2 eggs
- 3 1/4 C flour
- 1 t cream of tartar
- 1/2 t baking soda
- 1 C milk
- 1 qt. blueberries
- Topping:
- 1/2 C sugar
- 1 t cinnamon
- 1 stick margarine, melted
Hollandaise Sauce

1. Place yolks in blender with salt, juice and tobacco
- 4 Egg yolks
- 1/2 ½ t Salt
- 1 T Lemon Juice
- 1/4 ¼ lb. Butter, melted and very HOT
- Dash of Tabasco

Preheat the oven to 350. In a medium glass mixing bowl, melt the butter in the microwave
- 4 Eggs
- 1 Cup Sugar (1/2 white, 1/2 brown)
- *It’s not the end of the world if you only have one kind of sugar, but I’ve found this to be the BEST sugar ratio
- 1 Cup Semi-Sweet Chocolate Chips
- 6 oz Pecan Halves or Pieces (Halves are prettier, but I usually go with pieces because it’s easier to slice through)
- 1 Cup Corn Syrup
- 1 Stick Melted Butter
- 1 Tsp Vanilla
- 1/4 Tsp Salt
- 2 Frozen Pie Shells (I use deep dish, so there’s no chance of spilling over into the oven)
Grilled Peach Chicken
