Butternut Squash & Apple Soup

In stockpot over medium heat, melt butter
- 2 Tbs. unsalted butter
- 1 yellow onion, thinly sliced
- 1 jar butternut squash puree
- 1 Granny Smith apple, peeled, cored and thinly sliced
- 2 cups low-sodium chicken broth
- 2 small bay leaves
- 3 tsp. salt
- 1/2 cup creme fraiche
- 1/4 tsp. ground coriander (optional)
- 1/4 tsp. grated peeled fresh ginger (optional)
- Fried sage leaves for garnish
- Freshly ground pepper, to taste
- 8 baguette slices, each 1/2" thick, brushed with olive oil, toasted until golden

In a small bowl, combine the potato and salt and let stand for 10 minutes
- 12 oz. russet potato, peeled and finely grated
- 1/2 tsp. salt
- 1 1/2 Tbs. all-purpose flour
- 7 eggs
- 3 oz. ham steak, about 1/8 inch thick, cut into 2 1/2-by-1/4-inch strips
- 3 oz. cheddar cheese, grated

- 3 Tbs. extra-virgin olive oil
- 1 Tbs. unsalted butter
- 2 large yellow onions, thinly sliced (8 cups)
- 1/4 cup Calvados (apple brandy)
- Kosher salt and freshly ground pepper
