Beef Enchilada Rice

Brown beef in oil. Add onions and garlic; saute until tender
- 1/2 lb. lean beef, diced
- 1 Tbsp. oil
- 1/3 cup onion, diced
- 1 clove garlic, minced
- 2 tsp. chili powder
- 1/2 tsp. oregano
- 1/2 tsp. salt
- 1 can green chilies, diced
- 1 can tomatoes
- 3/4 cup water
- 1 1/2 cup rice, dry
- 2 tsp. parsley

Chicken Strata

1. Heat butter in large skillet over medium heat
- 1 tbsp. unsalted butter
- 1 medium onion, finely chopped
- 3 celery ribs, finely chopped
- 6 oz. asparagus, woody stems discarded, cut into 1 inch pieces
- 1/4 cup water
- 4 cups cubed (1 inch cubes) cooked chicken
- 1 cup mayonnaise
- 1 1/2 cups milk
- 1 1/2 cups chicken broth
- 6 large eggs
- 1 tbsp. chopped parsley
- 1 tbsp. chopped chives
- 1 tsp. salt
- 1/2 tsp. black pepper
- 6 cups cubed (1 inch cubes) French bread
- 1 cup shredded sharp cheddar cheese
Poppy Seed Dressing

- 1/3 cup cider vinegar
- 3/4 cup white sugar
- 1 cup canola oil
- 1 tsp. dried mustard
- 1 tsp. poppy seeds
Greek Meatballs with Feta

Combine crumbs, milk, feta, parsley, scallions, salt, spice mix and egg in a mixing bowl
- Makes about 40 medium to small meatballs
- 1 cup bread crumbs
- 1/4 cup milk-whole or 2%
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh parsley, minced
- 2 green onions, minced
- 1 teaspoon salt
- 2 teaspoons Greek Seasoning, Mediterranean Spice Mix or oregano
- 1 egg, lightly beaten
- 1 pound ground chuck
- 2 tablespoons olive oil
- 3/4 cup Kalamata olives, pitted and halved
- 1 tablespoon garlic, minced
- 1 teaspoon red pepper flakes
- 6 cups tomatoes, quartered, or 2 cans whole tomatoes (28oz cans)
Carrot-Ginger Sauce

Heat the oil in a 4-quart sauce pan over low heat
- 1 Tbs. canola oil
- 2 Tbs. chopped shallot
- 1 3/4 cups lower-salt chicken broth; more as needed
- 6 medium carrots, peeled and cut into large dice (about 2 cups)
- 2 Tbs. reduced-sodium soy sauce
- 1 Tbs. finely grated fresh ginger
- 1 Tbs. unseasoned rice vinegar
- 2 tsp. honey
- 1 tsp. Asian sesame oil

- 3/4 cup mayonnaise
- 1/2 cup sour cream

- 4 boneless, skinless chicken breasts cut into 1/2 inch strips
- 2 Tbsp. sweet paprika (I like sweet hot or 1/2 & 1/2)
- Salt and ground pepper
- 2 Tbsp. butter
- 1 onion, finely chopped
- 4 plum tomatoes cut into 1/2 inch dice (or a can of diced)
- 1/2 cup reduced fat sour cream

- 4 garlic cloves (minced)
