- Ingredients:
- 2 Cups Almond Flour
- 1/4 Tsp Sea Salt
- 1 Tsp Baking Soda
- 1/2 Cup Dried or frozen Blueberries
- 1/4 Cup Unsweetened shredded coconut
- Zest of 1/2 lemon
- 1 Egg
- 2 Tbsp Agave Nectar or 100% Pure Maple Syrup
- (Chocolate Chips are a great option to add)

- 12 oz. unsweetened coconut or almond milk
- 1 frozen banana
- 1 dried date, pitted
- 1/2 cup (handful) frozen blueberries
- 2 cups raw spinach leaves
- 1 scoop vanilla whey protein powder
Brkfst: Eggs with Mango Gazpacho

Process mangoes and EVOO in a blender or food processor until pureed
- 2 cups of 1/4-inch-diced fresh (ripe) mangoes
- 2 tablespoons extra-virgin olive oil
- 1 seedless cucumber, cut into 1/4-inch dice
- 1 red bell pepper, seeded and cut into 1/4-inch dice
- 1 sweet onion, cut into 1/4-inch dice
- 2 medium garlic cloves, minced
- 1 small jalapeno pepper, seeded and minced (optional)
- 3 tablespoons fresh lime juice
- 2 tablespoons chopped fresh cilantro
- Salt and freshly ground black pepper

- 10 drumsticks
- 2 large shallots, minced**
- 3 Calçot onions or scallions, thinly sliced**
- 3 tablespoons sherry vinegar
- 3 tablespoons avocado oil, virgin red palm oil, coconut oil, etc.
- 1 tablespoon coconut aminos
- 1 tablespoon Red Boat fish sauce
- Kosher salt
- Freshly ground pepper
- Fines herbes (optional)
- (*in place of the alliums, you can sub in 3 tablespoons of Penzeys Spices’ Sunny Paris seasoning)
Pizza: (Paleo) Pizza

Preheat your oven to 350. Using a spoon mix all crust ingredients together until it becomes very thick
- Crust:
- 2 cups Almond Meal
- 2 eggs
- 1/4 tsp Baking Soda
- 3 TBSP Olive Oil
- 1 tsp Garlic Powder
- Fresh Thyme (rosemary would be good)
- Toppings:
- 1 cup organic marinara sauce from Trader Joe’s
- 1 lb Italian pork sausage nitrate free
- 2 crook neck yellow summer squash diced
- 3 green onions chopped
- Handful of torn basil leaves
- 2 small tomatoes diced
- 1/2 cup roasted red peppers diced
- 1 zucchini, sliced thin

Shrimp: Paleo Fast Shrimp

In a large skillet, heat the coconut oil over medium heat
- Fast Shrimp
- 1 lb Wild Caught Argentinian Red Shrimp or other shrimp of your choice (I found mine at Trader Joe’s in the freezer section, raw, tails removed and de-veined)
- 1 bag frozen roasted red bell peppers and onions from Trader Joes (or 1 bell pepper diced and 1/2 yellow onion diced)
- 4 big hand fulls of baby spinach leaves
- 2 tablespoons coconut oil
- 2 tablespoons coconut milk
- 1/2 tablespoon curry powder (or more to taste)
- Sea salt and black pepper to taste
