Chick: PotPie: Chicken Pot Pie Bowl

Steam cauliflower, and mix with garlic, EVOO & season
- 1 1/4 pounds cauliflower
- 2 cloves garlic, smashed
- 5 tablespoons extra-virgin olive oil
- 2 large, skinless, boneless chicken breasts (about 1 pound)
- 1 small, finely chopped onion
- 1/2 teaspoon dried thyme
- 2 cups gluten-free chicken broth
- 1 cup frozen peas and carrots
- 1 cup small broccoli florets

- 1 teaspoon Dijon mustard
- Salt and pepper
Beef: Flank Steak (Grilled) with Salsa Verde

MARINATE THE STEAK: In a small bowl, combine the parsley, rosemary, thyme, garlic and olive oil

- 1 tablespoon plus 1 1/2 tsp. coarse kosher salt
- 1 teaspoon ground cumin
- 1/2 teaspoon red chile flakes
- 12 cups reduced-sodium chicken broth
- 1 can (28 oz.) diced tomatoes
- Juice of 2 limes
- 1 pkg (8 oz.) small corn tortillas, cut into 1/4-in. thick strips
- 2 lbs boneless, skinless chicken breast, in 1/4-in. thick strips
- 1 cup chopped fresh cilantro
- Sliced avocado, sour cream, grated Monterey jack cheese, additional chopped cilantro, and/or sliced green onions for topping

Chick: Best Chicken Fajita's Ever!

Serves 4
- 1.5 – 2 lbs. of “pastured” organic chicken breast
- 1 medium jicama (peeled and sliced into strips)
- 2-3 ripe mango (peeled and sliced into chunks)
- 2-3 ripe avocado (sliced into quarters)
- 1 red bell pepper (sliced into strips)
- 1 orange bell pepper (sliced into strips)
- 1 yellow bell pepper (sliced into strips)
- 1 large sweet onion (sliced into strips)
- 2 heads of Bibb or Butter lettuce
- Cumin, chili powder, freshly ground black pepper (liberal amounts of each)
- Sea salt to taste
- 1 bunch fresh cilantro (chopped)
Chick: Chicken Avocado Salad

Cook chicken breast until done, let cool, and then shred
- 1 Pkg boneless, skinless chicken breasts (2 or 3)
- 1 avocado
- 1/4 of an onion, chopped
- juice of 1/2 a lime
- 2 Tbsp cilantro (or sub basil if you prefer)
- some salt and pepper, to taste
Raw Ginger Lemon Tonic
