W30/B: Hearty Spinach Beef Frittata

Preheat the oven to 350°F In a large bowl, beat the eggs together with the smoked paprika, salt and pepper
- 10 eggs, beaten
- 2 teaspoons smoked paprika
- 3/4 teaspoon sea salt
- 1/2 teaspoon of black pepper
- 8 to 12 oz. of raw ground grassfed beef
- 1 small onion, diced
- 4 oz. package of shiitake mushrooms, sliced
- 10 oz. package of frozen chopped spinach, defrosted and excess moisture squeezed out
- 1 tomato, sliced

- Garlic Roasted Sweet Potatoes
- 5 cups sweet potatoes, peeled and diced
- 12 -15 whole cloves of garlic, peeled (cut the bigger ones in half lengthwise)
- 3 tablespoons coconut oil or bacon grease
- 1 teaspoon cinnamon
- 1 teaspoon fresh thyme leaves, minced
- Sea salt and black pepper to taste

- 2.5 lb pork shoulder roast, cut into 1/2 inch cubes
- 2 lbs tomatillos
- 2 cups chicken stock
- 2 tablespoons coconut oil
- 1 yellow onion, diced
- 4 garlic cloves, minced
- 1 bunch cilantro
- Juice from 1 lime
- 1 jalapeno
- 1 tablespoon cumin
- 1/2 teaspoon smoked paprika

- 1 cup finely shredded coconut
- 1/4 cup arrowroot flour
- 1/2 tsp ground ginger
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 tsp kosher salt
- 2 eggs
- 1 TBSP coconut aminos

- 1/2 cup almond flour
- 1/4 cup chopped flat-leaf parsley
- 2 large eggs, lightly beaten
- 2 tablespoons almond milk
- 1/4 cup chopped sun-dried tomatoes

- 3/4 teaspoon freshly ground black pepper
- 1 pound ground turkey, preferably dark meat
- 10 ounces sliced pancetta, about 10 slices

Instructions Basil Chicken Mix fish sauce, vinegar, and coconut aminos in a bowl and set aside

- 2 tbsp coconut aminos
- 1 tbsp fish sauce
- 1 tbsp rice wine vinegar
- 2 shallots finely diced
- 4 garlic cloves finely minced
- 6 dried chili peppers, crushed or chopped
- 1 lb chicken finely sliced
- .5lb sliced shitake mushrooms
- 3 green onions sliced, whites and most of greens
- 1 cup chopped thai basil (italian basil will work too but will be sweeter and taste different)
- Chili Pepper Sauce
- 1 shallot minced
- 2 tbsp fish sauce
- 1/4 lime juiced

How to: Zest one of your oranges and set the zest aside in a small bowl
- juice of 3 oranges, reduced
- zest from one orange (zest one of your oranges before you juice it)
- 2 Tbsp gluten free tamari sauce (or coconut aminos…not available in Switzerland)
- 1 Tbsp olive oil
- 1-2 garlic cloves, finely chopped
- 2 tsp honey
- 1/2 tsp arrowroot powder
- 1/2 tsp red chili pepper flakes or fresh chopped red chili
- 4 chicken breasts
- 1 Tbsp coconut oil
- 1 onion chopped
- 1 red bell pepper, chopped
- salt and pepper to taste
- a handful of roasted cashew nuts
- 1 spring onion, diced
