W30/D: Baked Creamy Chicken Verde

Preheat oven to 400 degrees F Place the chicken in a large glass baking pan
- 2 lbs boneless chicken parts, breast, or thighs(I used bone-in chicken parts and baked this considerably longer 1 hour 30 min.)
- 2 cups Green Verde Salsa
- 1 can of coconut milk
- 1 tsp salt
- 1/2 tsp fresh ground black pepper
- 1 TBS arrowroot, dissolved in 2 TBS cold water

- 6-10 links of sausage (pork or chicken)

If using wooden skewers, put them in cold water to soak for at least 30 minutes prior to using them
- 450 g pastured ground pork
- 1 small onion, finely chopped
- 1/2 red cooking apple, finely chopped
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp chai spice
- 1/4 cup fresh parsley, finely chopped
- 1/4 cup fresh mint, finely chopped
- 1/4 cup raisins
- 1 egg, lightly beaten
- 1/4 cup coconut flour
- 9 slices pastured bacon, cut in half
- 1 red cooking apple, peel on, cored and cut into 8 wedges
- 6 wooden or metal kebab skewers

- 1/2 red (or white) onion, chopped
- 6 mushrooms, chopped
- 2 cloves garlic, minced (1/2 tsp. teaspoon minced garlic)

- 8 eggs, beaten well
- 2 tsp. prepared Italian herb rub (or make your own, with sea salt, oregano, dried garlic, dried onion, lemon peel, and chiles)

- 1 tablespoon extra-virgin olive oil*, divided
- 2 cups (about 1 onion) thinly sliced yellow onion
- 1 pound button mushrooms, thinly sliced
- 3/4 teaspoon salt and 1/2 teaspoon freshly ground black pepper, divided
- 6 eggs
- 3/4 cup reduced-fat milk
- 1 teaspoon freshly grated nutmeg
- 11/2 cups shredded Swiss cheese*
- 1 (16-ounce) bag frozen chopped spinach*, thawed and squeezed to remove as much liquid as possible
