CrockPot: Beef: Beef Stew and Savory Cauliflower

Throw it all in your crock pot, mix well, cook all day on low
- Garlic Beef Stew
- 1.5 – 2 lbs of grass fed stew meat
- 1 yellow onion diced
- 4-6 carrots diced
- 4-6 stalks of celery diced
- 6-12 mashed cloves of garlic (I used the jarred crushed garlic from TJ’s)
- palm full of ground marjoram
- sea salt and black pepper to taste
- 1 small can tomato paste
- splash of chicken broth
- Savory Cauliflower Mash
- 1 giant head of organic cauliflower steamed until soft
- big hunk of Kerrygold Irish butter
- palm full of turmeric powder
- sea salt and white pepper to taste
- Blend all ingredients in a food processor. I like to leave mine a little lumpy for texture.

- 1 large Chicken breast, cooked through and cooled (20-25 mins @350)
- 2-3 Green onions, green and white parts chopped
- 1/2 tsp or one clove Garlic, minced
- 3 tbsp Curry paste, I used green but yellow and red are both good too
- 2-3 tbsp full fat Coconut milk
- 1/4 c Sun-dried tomatoes, I use the ones from Trader Joe’s that aren’t packed in oil
- 1/4 c Golden raisins
- 1/4 c Slivered almonds
- S&P to taste

Beef: Burger: (Paleo) Puerto Rican Beef

In a large skillet brown the ground beef
- Puerto Rican Beef
- 1 lb grass fed ground beef
- 1 bunch kale chopped
- 1 white onion sliced
- 1/2 of a green, red, and yellow bell pepper sliced
- 1/2 cup pimento stuffed green olives
- 3 tbsp olive oil
- 1/2 tbsp ground cumin
- 1 tsp ground coriander
- 1/2 tbsp turmeric powder
- 1 tbsp dried oregano
- Pinch of saffron threads (optional)
- Sea salt and black pepper to taste
- 3 sweet potatoes
- 1 ripe avocado
CrockPot: Soup: (Paleo) Curried Sweet Potato, Apple and Ginger Soup

Put everything except the cilantro and coconut milk in the crockpot
- 4 qt. crockpot (or 6 qt. would work, too - soup is more forgiving)
- 3 large sweet potatoes, peeled and cut into chunks
- 1 medium white onion, diced
- 1 large golden delicious apple, peeled and cut into chunks
- 2 cups chicken broth
- 2 cloves garlic, minced
- 2 T ginger, grated
- 1 T curry powder
- 1/2 t red chili paste
- juice of one lime
- 2 T cilantro, chopped
- 1 14.5 oz can coconut milk
Crock: Chicken Cacciatore

Directions Heat the oil in a 4-quart or larger cooker
- Extra Virgin Olive Oil
- 3 Shallots, Chopped
- 4 Garlic Cloves, Crushed
- 1 Green Bell Pepper, seeded & diced
- 1/2 cup Imagine brand Organic Chicken or Vegetable Broth (make your own or buy another brand – just be careful of sneaky sugars/soy/gluten/etc.)
- 1 8-10 oz package mushrooms, sliced
- 5-6 Boneless Skinless Chicken Breasts (good sized ones, not midgets – you’ll want leftovers!)
- 2 Cans Organic Crushed Tomatoes
- 2 Tb Organic Tomato Paste
- 1 Can Pitted Black Olives (I used Whole Foods Brand – just olives, water, salt)
- Fresh Parsley
- Red Pepper to taste (I used a healthy 1/2 tsp, but I like spicy!)
- Sea Salt & Black Pepper to taste

- 1 tablespoon sesame oil
- 1 tablespoon crushed red pepper
- 2 pork tenderloins (about 2 pounds total)

- Directions:
- 12 - 14 medium/large baking apples, cored, peeled & slice
- 1 cup blueberries
- 1-2 tbsp flax seeds
- Pre-heat oven to 350F.
- Combine all ingredients in large casserole dish.
- Bake for 45 min - 1 hour. Less time for firmer apples, more time for mushy apples.
- Serve with sauce. Sprinkle with cinnamon and cocoa powder (optional).
- Cashew Cream Sauce
- Ingredients:
- 1 cup raw cashew
- 1 cup dates or raisins
- 1 1/2 cups unsweetened soymilk
- 2 tsp vanilla extract
- Directions:
- Blend all sauce ingredients in heavy duty blender like Vita-Mix till smooth.
