Brkfst: Pancake: (Paleo) Zucchini Pancakes

Prepare: - Grate zucchini into a small bowl
- Ingredients:
- 1 medium size zucchini
- 1 medium size green onion
- 1 large egg
- Salt to taste
- Pepper to taste
- 2 tablespoons olive oil for frying

- 1/2 Bartlett pear

Cut the thawed shrimp in half and set aside

- 1 bag of frozen already cooked tail removed shrimp – thawed and drained
- 1 cup cherry tomatoes halved
- 1 green bell pepper sliced
- 1/2 red onion sliced
- 1 tbsp cumin powder
- 1/2 tsp cayenne pepper
- 3 garlic cloves smashed or minced
- 3 tbsp coconut oil
- 1/2 a jar of salsa verde (I prefer Trader Joe’s brand)
- 1 head of iceberg lettuce leaves for taco shells

- 2 bags of sweet potato spears from Trader Joe’s or 2-3 sweet potatoes cut like french fries
- 1 tbsp chili powder
- 1 tbsp paprika
- 1/2 tbsp cinnamon
- 1/2 tsp cayenne
- black pepper to taste
- sprinkle of sea salt
- 1/4 – 1/2 cup olive oil

CrockPot: Beef: (Paleo) Marvelous Meatballs

Cover meatballs with tomato sauce and cook all day on low
- These are a must try, and yes, I made them in the crock pot but you can also bake these in the oven as well. Here’s the recipe:
- Mix together (use your hands)
- 2 lbs grassfed ground beef
- 1 lb of pork sausage
- chopped celery, onions, and carrots
- 3 eggs
- 1/2 cup almond meal
- lots of dried oregano, garlic powder, cracked black pepper, and a little cayenne
- small drizzle of raw honey
- Form into large meatballs and cover bottom of crock pot, you might have to stack them depending on the size of your crock pot.
- For the sauce mix:
- 1 16 oz can of diced tomatoes
- 1 can of tomatoe paste
- large a large handfull of torn fresh basil
- 5-6 coarsely chopped garlic cloves
- a couple pinches of sea salt
- cracked black pepper to taste.
Soup: Paleo Pork Loin and Butternut Squash Stew

- 2.5 lbs pork loin chops, cubed
- 2 leeks, trimmed and sliced
- 4 celery stalks, chopped
- 2 shallots, diced
- 7-10 garlic cloves, thinly sliced
- 4 cups cubed butternut squash
- 2 teaspoons garam masala
- 2 teaspoons sea salt
- 1 1/2 teaspoons fresh squeezed lemon juice
- 1/4 cup coconut milk
- 1 cup chicken broth
