Salad: (Paleo) Fresh Fruit Salad

Combine chopped and sliced fruits in a large serving bowl; toss gently
- Dressing:
- 6 peaches, peeled, pitted and chopped
- 1 -1 pound strawberries, rinsed, hulled and sliced
- 1/2 -1/2 pound seedless green grapes
- 1/2 -1/2 pound seedless red grapes
- 3 -3 bananas, peeled and sliced
- 1/2 -1/2 pound blackberries or blueberries (to taste)
- -small amount of honey (topping to taste)
- •juice of one lime
- 1/2 •1/2 cup pineapple juice
- 1 •1 teaspoon ground ginger

I had a fever. I hate it when my body shuts me down
- 1 1/2 Boneless Chicken Breast
- 1 Red Onion, diced
- 3 Stalks of Celery, chopped
- 3 Carrots, chopped
- Handful of Chopped Parsley
- 1 T Fresh Ginger, shredded
- Zest of whole Lemon
- Pinch of Red Pepper Flakes
- Pinch of Oregano
- Squeeze of 1/2 Lime
- Salt & Pepper
- 32 oz Chicken Broth, Organic
- 32 oz Water
- Lemongrass would have been wonderful, but I didn't have it on hand. Next time, when I plan on this... I'll use lemongrass, skip the parsley and add cilantro.
Baked: Pie: (Paleo) Everyday Paleo Pumpkin Pie

While the crust is in the oven, whisk all of the pie filling ingredients together
- Crust
- 1/2 1/2 1/2 cup hazelnuts
- 1 1 1 cup pecans
- 4 4 4 tablespoons melted organic grass fed butter
- pinch pinch of sea salt
- Filling
- 1 1 14oz – 14oz can of organic pumpkin puree (nothing added, just pumpkin)
- 2 2 2 teaspoons ground cinnamon
- 1/4 1/4 1/4 teaspoon ground cloves
- 1/4 1/4 1/4 teaspoon fresh grated ginger
- 2 2 2 eggs
- 1/2 1/2 1/2 cup raw organic honey
- 1/2 1/2 1/2 cup coconut milk
Gluten Free Lemon Blender Pie

Throw all ingredients in your blender (I like to use a Vitamix) and blend until well combined
- 3/4 cup white rice flour
- 4 organic eggs
- 1/3 cup freshly squeezed lemon juice
- 1 cup honey
- 1 cup shredded coconut
- 1 Tbsp natural vanilla extract
- 1 1/2 cups soy milk or hemp milk
- 1/2 stick or 1/4 cup of organic melted butter or vegan margarine
- 1 tsp freshly grated lemon zest

- 2 or 3 heads of broccoli, depending on their size;
- 1 1/2 cup red or green grapes, halved;
- 10 slices bacon;
- 1/2 chopped onion;
- 1/2 cup slivered or chopped almonds;
- 1 1/4 cup paleo mayonnaise;
- 1/4 cup lemon juice.

- Ingredients
- 2 (8-inch) flour tortillas
- 1/4 cup grated Monterey Jack or cheddar cheese
- 1/2 cup cooked and drained black beans
- 2 tablespoons coarsely chopped cilantro

- 2 lbs lean ground beef (I look for 90/10)
- 1 large steak cut into chunks (or stew meat, whatever you prefer)
- 1 large can crushed tomatoes (look for the one where the only ingredient is tomatoes)
- 1 can diced tomatoes and chilis (again, look for natural here)
- 1 small can tomatillo salsa (in the Mexican food aisle, look for natural ingredients in this…I think the brand starts with an E)
- large onion diced
- 1/8 cup almond flour
- 2 cups of beef broth
- 3 cloves garlic minced or about
- 2 tsp garlic powder
- 1 tsp ground cinnamon
- 2 tbs ground cumin
- 3-4 tbs chili powder
- olive oil
Brkfst: (Paleo) Egg Cupcakes

Total Time: 40 mins 1 Preheat oven to 350 and grease with olive oil two muffin pans
- 10 -12 eggs, whisked well
- 1 green onion
- 2 zucchini
- 2 cups spinach
- 1/2 a jar roasted red and yellow peppers
- 6 -8 slices cooked bacon

Chocolate chip scones doesn't sound like the most wholesome meal
- 2 1/2 cups almond flour
- Pinch of salt
- 1/2 tsp baking soda
- 3 tbs grapeseed oil
- 2 tbs unsweetened applesauce
- 3 tbs raw honey
- 2 whole omega-3 eggs
- 1 bar of 85% cocoa chocolate (3.5 oz), chopped into small chunks

1. In a bowl or ziploc bag, combine all of the ingredients for the marinade and mix to combine
- For the marinade:

- 4 tilapia filets (mine were 4 ounces each) 2/3 cup oil
- 1/2 lime, juiced
- 1 teaspoon minced garlic
- 2 Tablespoons fresh parsley
- 2 large basil leaves, chopped
- 1 teaspoon black pepper
- 1/2 teaspoon kosher salt
- For the salsa:
- 1 peach, chopped finely
- 1/2 cup fresh blueberries
- 1/3 of a red bell pepper (or about )
- 2 whole green onions, sliced
- 2 large basil leaves, chopped
- 1/2 of a lime, juiced
- salt and pepper to taste
