Aptzr: Luigi Stuffed Mushrooms

Instructions: In a large dutch oven, brown the meat until it is cooked through
- 9 small portobello mushroom caps
- 1 small red onion (or 1/2 larger red onion)
- 3 carrots, peeled
- 2 large celery stalks
- 2 pounds ground meat (I have used ground turkey or half turkey/beef)
- 4-5 cloves of garlic (or more/less to taste)
- salt/pepper to taste
- 1 teaspoon dried (not ground) thyme
- 1 cup almond flour
- 2 eggs
- 1 medium-sized handful fresh parsley

Directions Preheat the oven to 350 degrees F
- 1 1/4 pounds boneless, skinless chicken breasts, cut into 1/2-inch chunks
- 1 teaspoon salt

- 1 1/2 cups low-fat milk

In a medium bowl, combine the ground beef, eggs, almond meal and spices
- 1 lb. grass-fed ground beef
- 2 eggs, slightly beaten
- 4 T almond meal
- 1 tsp. dried Italian seasoning
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1/2 tsp. black pepper
- 6 C chicken broth
- 2 C fresh baby spinach
- 1 C cauliflower (*riced cauliflower)

- Egg Foo Yong:
- 4 large eggs
- 4 ounces grilled chicken thighs, diced
- 2 cups steam-sautéed cabbage, minced
- 4 scallions, green and white parts, thinly sliced
- 2 teaspoon coconut aminos
- 1 teaspoon Chinese five-spice powder
- 1/4 teaspoon cayenne pepper
- 1 teaspoon sesame oil
- 2 teaspoons coconut oil
- additional scallion tops, for garnish
- Spicy Secret Sauce:
- 2 tablespoons Olive Oil Mayo
- 1 teaspoon coconut aminos
- 1/2 teaspoon sesame oil

- 100 g fresh pineapple, very finely chopped

- 1 or 2 serrano chiles, seeded for less heat, if desired
- 3 cups loosely packed cilantro leaves
- 1/4 cup freshly squeezed lime juice (about 3 limes)
- 1/2 teaspoon coarse salt
- 1 tablespoon plus 1 teaspoon olive oil

- the mash:
- 3 pounds of ground lamb (use beef if you can't get lamb)
- 2 large carrots, grated or chopped fine
- 1 large onion, grated or chopped fine
- 2 tablespoons of fresh rosemary, minced
- 2 tablespoons of fresh thyme, minced
- 5 cloves of garlic, minced or grated
- 2 tsp. of coconut aminos
- small can of tomato paste
- a few glugs of red wine (don't cook with a wine that you wouldn't drink with dinner. cooking with alcohol only concentrates the flavor you are using)
- olive oil
- salt & pepper
- 2-12 oz. bags of frozen cauliflower (i use the kind you can microwave right in the bag)
- 2 tablespoons of melted grass fed butter (or coconut oil. it will have a coconutty flavor.)
- 4-5 tablespoons of heavy cream (or coconut milk)
