  • 2 Tbsp coconut oil (or your choice of cooking fat)

  • 3-4 celery sticks, diced into small cubes
  • 1 can mandarin oranges*, diced into cubes
  • 1/4 cup slivered almonds
  • 2 Tbsp fresh mint leaves, chopped fine
  • 2 Tbsp lemon juice
  • salt and pepper to taste

Mix all the above ingredients and form into meatballs (I made about 1-2in meatballs)

  • 8-10 dried apricots, chopped

  • 1/3 cup flour (I used spelt)
  • 1/3 cup quinoa flakes (sub with flour or oatmeal if don’t have these)
  • 1/8 cup cocoa
  • 1 t baking powder
  • tiny pinch salt
  • Syrup ingredients:
  • 1/8 cup almond milk
  • 1/8 cup maple syrup
  • 1/3 cup raspberries
  • 1 T chia (optional, to thicken).

  • 1/2 6oz can coconut milk

  • 1 teaspoon sea salt

  • 1 ten-ounce bag of brocolli slaw
  • 1 cup lightly packed fresh cilantro (omit if you're one of those folks who doesn't "do" cilantro...or substitute fresh diced basil leaves)
  • 20 oz. steak, cooked medium, chilled, and sliced very thin (I use kitchen shears to shortcut this!)
