Baked: Crisps: (Paleo) Raw Apple Crisp

Put apples in an 8-inch square baking dish or 2-quart casserole dish
- 4 apples, cored and chopped
- (Can substitute apple for pears)
- 1/4 cup orange juice
- 3/4 cup pecan halves
- 3/4 cup hazelnuts
- 3/4 cup raisins
- 3/4 teaspoon ground ginger
- 3/4 teaspoon ground cinnamon
Snacks: Chocolate Covered Nuts and Salt

In a small sauce pan, heat the orange juice on medium heat
- Ingredients
- 3.5 oz Unsweetened Dark Chocolate
- 1 cup orange juice
- 2/3 cup honey
- Course Sea Salt
- 5 oz Nuts of your choice
Salad: Asian Chicken Salad

Add coconut oil to your pan, and cook chicken thoroughly
- 1-1/2 lb. chicken breast, cleaned and pounded thin
- 2 Tbsp coconut oil (or your choice of cooking fat)
- 1/4 cup homemade mayo (or add to taste)
- 1 bunch scallions, chopped fine
- 3-4 celery sticks, diced into small cubes
- 1 can mandarin oranges*, diced into cubes
- 1/4 cup slivered almonds
- 2 Tbsp fresh mint leaves, chopped fine
- 2 Tbsp lemon juice
- salt and pepper to taste

Beef: Meatballs: Paleo Yummy Greek Meatballs

Mix all the above ingredients and form into meatballs (I made about 1-2in meatballs)
- Yummy Greek Meatballs
- 1 pound ground lamb
- 1/2 pound ground beef
- 2 tablespoons minced chives
- 3 cloves garlic, minced
- 1/4 cup chopped parsley
- 1 egg, room temp
- 1 tablespoon dried mint (I used fresh)
- 1 tablespoon oregano
- 1 teaspoon sea salt
- 1 1/2 tespoons cumin
- 1 tablespoon cinnamon
- 2 tablespoons extra virgin olive oil
- 8-10 dried apricots, chopped
- 8 (or a many as you want) kalamata olives, chopped

If you’re using frozen raspberries, start by thawing them in a pan over med/low heat

- 1 cup raspberries
- 2 T chocolate chips
- 2 eggs
- 1/2 cup almond milk
- 1 T chia seeds (if you don’t have it, replace w flaxseed or flour)
- 3 T plain yogurt
- 1 T coconut oil (or other oil)+extra for greasing pan
- 1/3 cup flour (I used spelt)
- 1/3 cup quinoa flakes (sub with flour or oatmeal if don’t have these)
- 1/8 cup cocoa
- 1 t baking powder
- tiny pinch salt
- Syrup ingredients:
- 1/8 cup almond milk
- 1/8 cup maple syrup
- 1/3 cup raspberries
- 1 T chia (optional, to thicken).

- 1/2 yellow onion, minced
- 1 teaspoon garlic powder

- For the mushroom gravy:
- 2 tablespoons fat of choice (I used duck fat-duh)
- 3/4 cup beef broth

- 1/2 yellow onion, minced
- 1 garlic clove, minced
- 1 package mushrooms (your choice what kind)
- 1 teaspoon sea salt
- 1 teaspoon pepper
- 1/2 teaspoon garlic powder

Combine first three ingredients in a gallon zip bag
- 1 ten-ounce bag of brocolli slaw
- 1 cup lightly packed fresh cilantro (omit if you're one of those folks who doesn't "do" cilantro...or substitute fresh diced basil leaves)
- 20 oz. steak, cooked medium, chilled, and sliced very thin (I use kitchen shears to shortcut this!)
- 1/4 c. cold-pressed extra virgin sesame oil
- 1/4 c. vinegar of choice (apple cider vinegar or rice vinegar are good options)
- Tamari, to taste
