Brkfst: Authentic Huevos Rancheros

Heat oil in a small skillet over medium-high heat
- 2 tablespoons vegetable oil
- 4 (6 inch) corn tortillas
- 1 cup refried beans with green chilies 1 teaspoon butter
- 4 eggs
- 1 cup shredded Cheddar cheese
- 8 slices bacon, cooked and crumbled 1/2 cup salsa (optional)
Beef: Salisbury: Everyday Paleo Salisbury Steak

In a large mixing bowl place all the ingredients for the steaks and using your hands mix well
- Steaks:
- 2 pounds of ground beef
- 1 cup spinach, finely diced
- 1 egg
- 1 teaspoon crushed garlic
- 1 teaspoon sea salt
- 1 tablespoon dried thyme
- 1/2 teaspoon rubbed sage
- 1/4 teaspoon ground marjoram
- 1/4 teaspoon finely ground black pepper
- 2 tablespoons grass fed butter, ghee, or coconut oil
- Gravy:
- 4 tablespoons butter
- 1 red onion thinly sliced
- 1/2 red bell pepper thinly sliced
- 2 cups sliced crimini mushrooms
- 1 cup beef broth
- 1/4 cup coconut milk
- Black pepper to taste
Dessert/GF: Fresh Fruit Pie

Warning: this does not come out pretty
- Can use plain apple sauce or apple rhubarb sauce or make this apricot sauce.
- 1 1/2 cups water
- 1 cup sulfate-free dried apricots
- 1/2 dried cranberries
- 1/4 apple juice
- 1 tbsp. lemon juice
- Topping
- fresh fruit sliced, approx 2-3 cups

Soup: Paleo Gazpacho

In a blender or food processor, add all the gazpacho ingredients and blend until totally smooth
- Everyday Paleo Gazpacho with Avocado Cream
- 4 large tomatoes, diced or aprox 4 cups
- 1/2 medium red onion, diced
- 1 cup cucumber, diced
- 1 cup sweet bell pepper, diced
- 1 cup fresh cilantro – reserve some for garnish
- Small piece of a jalapeno (or more if you like it spicy)
- 2 garlic cloves
- 2 teaspoons ground cumin
- Sea salt and black pepper to taste
- Splash of balsamic vinegar
- Avocado Cream
- 2 ripe avocados
- 1/4 cup fresh cilantro
- 1/2 cup full fat canned coconut milk
- Juice from 1/2 a lime

Combine the dry ingredients together in one bowl, then in another bowl combine the wet ingredients
- Wet:
- pinch of baking soda
- pinch of salt
- 1/2 tbsp pumpkin pie spice
- 1/2 cup almond flour
- Dry:
- 1/2 tsp vanilla extract
- 1/4 cup canned pumpkin
- 1 tbsp honey
- 2 eggs

In a small bowl mash half of the beans with a masher or the back of a spoon, and set aside
- Ingredients
- 1 (15-ounce) can low-sodium canellini beans, drained and rinsed
- 1 tablespoon olive oil
- 1/2 large onion, diced (about 1 cup)
- 2 carrots, diced (about 1/2 cup)
- 2 stalks celery, diced, (about 1/2 cup)
- 1 small zucchini, diced (about 1 1/2 cups)
- 1 clove garlic, minced
- 1 tablespoon chopped fresh thyme leaves (or 1 teaspoon dried)
- 2 teaspoons chopped fresh sage leaves (or 1/2 teaspoon dried)
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 32 ounces low-sodium chicken broth or vegetable broth
- 1 (14.5-ounce) can no salt added diced tomatoes
- 2 cups chopped baby spinach leaves
- 1/3 cup freshly grated Parmesan, optional

Add all ingredients, mix well and simmer forr 30-45 minutes
- 4-6 cups of already cooked shredded chicken and 10 cups of chicken broth.
- 5 carrots, diced
- 1 red onion, diced
- 1 14.5oz can diced tomatoes
- 1 cup Salsa Verde (I like the Trader Joe’s brand)
- 1/2 tablespoon garlic powder
- 1 tablespoon cumin
- 1 tablespoon dried oregano
- 1 teaspoon smoked paprika
- 1/8 teaspoon cayenne pepper
- Sea salt and black pepper to taste

- 1 cup chopped onion
- Kosher salt and freshly ground black pepper

- 12 ounces dried green or yellow split peas, picked over and rinsed
- 5 cups chicken broth
- 1 tablespoon curry powder
