Chick: Italian: Paleo Jerusalem Chicken

Preheat oven to 350 degrees
- 4 skinless boneless chicken breasts
- 1 C organic chicken broth
- 4 cloves garlic, crushed and minced
- 1 yellow onion, chopped
- 1 C white wine
- 1 (8 oz) package sliced mushrooms
- 1 (10 oz) can artichoke hearts, drained (packed in water)
- 1 C coconut milk
- 2 T fresh chopped Italian parsley
- black pepper
- paprika
- sea salt (to taste)
- 2 tsp. olive oil

- 1 cup whole coconut milk
- 1 - 2 tablespoons curry powder*
- scant 1/2 teaspoon fine grain sea salt
- 1/2 large red onion, chopped
- 1 medium garlic clove, chopped
- 1/3 cup water
- Cooked chicken breast, cut into small cubes (optional)
- 1 cup green beans, cut into 1-inch segments
- 1 1/2 cups cauliflower, cut into tiny florets
- 1/3 cup cashews, toasted
- a handful of cilantro, loosely chopped
Soup: Nazi's Mexican Chicken Chili

1) Clean and filet the two chicken breast
- 1 pound chicken breast fillets (4 fillets) (I had 1 1/2 lb which was 2 chicken breasts)
- 1 tablespoon olive oil
- 1 potato, peeled; chopped
- 1 small onion, diced
- 1/2 carrot sliced
- 1 celery stalk diced
- 1 jalapeno, diced finely
- 1/4 cup chopped Italian parsley
- 1 clove garlic, minced
- 10 cups water
- 2 cups chicken stock
- 1/2 cup tomato sauce
- 1 cup frozen yellow corn
- 1 cup canned diced tomatoes
- 1 15-ounce can red kidney beans, plus liquid
- 1/4 cup diced canned pimento
- 1 1/2 teaspoons chili powder
- 1 teaspoon cumin
- 1/4 teaspoon salt
- dash cayenne pepper (I use 1/8 t as a dash)
- dash basil
- dash oregano
Pork: Orange Ginger Pork

Begin by preheating a large skillet on high heat for 1 minute
- Marinade:
- 1 x 2 lb organic pork loin
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tbsp fresh ginger – grated
- 1 large orange – zested
- 2 tbsp olive oil
- 1/4 tsp black pepper
