VitaM: Lemon Lime Sorbet

Put agave and water in saucepan and stir over low heat until dissolved
- 1/2 cup freshly squeezed lemon juice
- 1/2 cup freshly squeezed lime juice
- 2 Tbsp grated lemon zest
- 2 Tbsp grated lime zest
- 2 cups filtered water
- 2 cups agave nectar
- 4 organic egg whites

- 1/2 C Water

Pork: Paleo Sausage and Cabbage 'Noodles'

In a large skillet brown the sausage
- Sausage N’ Cabbage “Noodles”
- 1 1 1 lb mild Italian pork sausage or other ground meat of your choice
- 1 1 1 red onion, thinly sliced
- 1/2 1/2 5 head or 5 cups thinly sliced green cabbage
- 2 2 2 tablespoons grass fed butter (or ghee, or coconut oil)
- 1/2 1/2 1/2 teaspoon caraway seeds
- 1/2 1/2 1/2 teaspoon paprika
- to ground black pepper and sea salt to taste
- FRIED APPLES
- 3-4 3-4 3 small organic apples, thinly sliced (about 3 cups)
- 2 2 2 tablespoons coconut oil
- 1/4 1/4 1/4 cup raisins
- 1/2 1/2 1/2 tablespoon cinnamon
- 2 2 2 tablespoons canned full fat coconut milk

Directions Preheat the oven to 375 degrees F
- Ingredients
- 8 (3 by 3-inch) packaged Chinese wonton skins, separated
- 1 tablespoon plus 2 teaspoons canola oil
- 1/4 teaspoon salt
- 2 scallions, greens included, trimmed and thinly sliced (about 1/4 cup)
- 3 cloves garlic, sliced
- 4 cups sliced napa cabbage
- 3/4 cup celery, thinly sliced (about 4 celery hearts or 2 long stalks)
- 1 (8-ounce) can bamboo shoots, drained and julienned
- 2 cups shiitake mushrooms, cleaned, trimmed and thinly sliced (about 6 ounces)
- 3/4 teaspoon sugar
- 1 cup low-sodium chicken broth
- 1 1/2 tablespoons low-sodium soy sauce
- 2 tablespoons toasted sesame oil
- 1 1/2 teaspoons cornstarch dissolved in 1 tablespoon cooking sherry
- 2 cups cubed or shredded cooked turkey or chicken
- 2 cups cooked brown rice
- 1 tablespoon toasted sesame seeds
Salad: Almond Mandarin Salad

In a medium skillet over medium-high heat, cook bacon until evenly brown
- 1/2 pound bacon
- 2 tablespoons white wine vinegar
- 3 tablespoons honey
- 1/2 teaspoon dry hot mustard
- 1/2 teaspoon celery salt
- 1/2 teaspoon ground paprika
- 1/4 cup olive oil
- 1 head red leaf lettuce, torn into bite-size pieces
- 1 (15 ounce) can mandarin oranges, drained 1 bunch green onion, diced
- 3/4 cup slivered almonds
Salad: Buffalo Chicken Chopped Salad

Put all chicken-related ingredients in a pan, bring to a boil, then simmer, partly covered, for 10 minutes
- Chicken
- 2 cloves garlic, peeled and lightly smashed
- 1 teaspoon dried thyme
- 1 tablespoon salt
- 4 cups water
- 1 pound boneless, skinless chicken breasts
- Salad
- 1 head iceberg lettuce, shredded
- 1 large cucumber, sliced very thin and quartered
- 2 stalks celery, sliced very thin
- 1/2 medium onion, sliced into very thin moons
- 1/2 cup fresh parsley leaves, minced
- Ranch Dressing
- 1/4 cup homemade mayo
- 1/2 clove garlic, minced
- 1/8 teaspoon paprika
- 2 teaspoons dried chives
- 1/2 teaspoon lemon juice
- salt and black pepper, to taste
- “Wing” Sauce
- 2 tablespoons coconut oil or ghee
- 1/4 – 1/3 cup hot sauce

In a small saucepan over medium heat, combine the ghee, and minced onion
- 2 Tablespoons ghee
- 1/4 cup onion, minced
- 3 peaches, diced
- 1/4 cup mango, diced
- 1 garlic clove, crushed
- 1 Tablespoon orange juice
- 1 Tablespoon apple cider vinegar
- 1/2 teaspoon grated ginger
- 1/4 teaspoon red pepper flakes
- Zest from 1 orange

Put all of your ingredients in the blender (I use a Vitamix) and puree until smooth and creamy
- 1 cup of raw almond milk, cashew milk, macadamia milk, hemp milk or soy milk
- 1 cup of freshly squeezed orange juice or apple juice
- 2 organic bananas
- 1 – 2 cups of fresh or frozen organic blueberries
- 1 handful of organic raw almonds
- 1 handful of organic raw walnuts
- 2 Tbsp organic raw flaxseeds/linseeds

- Ingredients, makes 6
- 1 cup grated zucchini (about one medium zucchini)
- 3 eggs
- 2 tablespoons coconut oil
- 1/4 cup + 1 tablespoon coconut flour
- 1/2 cup ground almonds (almond flour)
- 1/2 cup coconut milk
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon freshly grated ginger
- 1/2 teaspoon baking soda
- 1 tablespoon honey (optional)
