Salad: (Paleo) Chicken Salad

I made this delicious Chicken Salad
- 3 chicken breast
- 1/2 red cabbage
- 1 apple, minced
- 2 celery, minced
- 1 jar of sun dried tomato
- fresh ground pepper
- Olive Oil
Salad: Mexican Salsa Verde

- 1/2 cup onion, chopped;
- 1 1/2 pound green tomatillos, husk removed;
- 1/2 cup cilantro, chopped;
- 2 tbsp lime juice;
- 2 jalapeño peppers, seeded and chopped;
- Salt and pepper to taste.
Salad: Paleo Mango Chicken Salad

1) In a medium sized skillet cook the bacon until almost crisp
- Mango Chicken Salad with Chipotle Mayo
- 4-5 bacon strips, diced
- 1/2 cup red bell pepper, diced
- 1 jalapeno, seeds removed and finely diced
- 3 cups already cooked chicken, diced (I used leftover grilled chicken breasts)
- 1 cup mango, diced
- 1/2 cup homemade paleo mayo - mix in chipotle powder to taste (this stuff is spicy so start with a small amount and work your way up from there)
- Shredded romaine lettuce leaves
- Sliced almonds as a garnish
W30/D: Chili Lime Drumsticks

Whisk together all of the ingredients except for the chicken legs in a small mixing bowl
- 2 pounds chicken drumsticks (about 10)
- 1 medium lime, juiced and zested
- 1 tablespoon smoked paprika
- 1 teaspoon kosher salt
- 1 teaspoon ancho chili powder
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon freshly-ground black pepper
- 1/2 tablespoon fresh ginger, grated
- 1/2 tablespoon garlic, minced
- 1 tablespoon Dijon mustard
- 2 tablespoons honey
- 2 tablespoons olive oil
W30/D: Spinach Stuffed Chicken with Bacon

Preheat your oven to 375 degrees
- 10 slices of "clean" bacon, (nitrate, nitrite free, etc.), divided
- 1/2 cup red onion chopped
- 4 large garlic cloves chopped
- 3/4 pound of spinach, chopped
- 4-5 boneless skinless, organic, free range chicken breast
- dried Thyme
W30/D: Crock Pot Lemongrass and Coconut Chicken Drumsticks

Place the drumsticks in a large bowl and seasoned them with salt
- 10 drumsticks, skin removed
- 1 thick stalk fresh lemongrass, papery outer skins and rough bottom removed, trimmed to the bottom 5 inches
- 4 cloves garlic, minced
- 1 thumb-size piece of ginger, microplaned
- 1 cup coconut milk
- 2 tablespoons Red Boat fish sauce
- 3 tablespoons coconut aminos
- 1 teaspoon five spice powder
- 1 large onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- Celtic Sea Salt
Chick: Italian: Paleo Sundried Tomato Chicken Bake with Bacon Brussel Sprouts

Preheat oven to 375. Place the chicken breasts in a large glass baking dish
- 2 2 2 lbs boneless skinless chicken breasts cut in half (I used the organic free range chicken breast tenders from Trader Joe’s)
- 8.5oz 8.5oz 8.5oz jar of julliane cut sun dried tomatoes
- 8 8 8 garlic cloves, sliced thin
- 2 2 2 tablespoons dried basil
- to salt and black pepper to taste
- Brussels Sprouts with Bacon
- 12 12 12 oz of bacon, diced
- 1/2 1/2 1/2 lb Brussels Sprouts
- 1/2 1/2 1/2 teaspoon dried dill
- to pepper to taste
Slime

After you have dissolved the borax and diluted the glue, you are ready to combine the two solutions
- There are two components to slime. There is a borax and water solution and a glue, water, and food coloring solution. Prepare them separately.
- ° Mix 1 teaspoon borax in 1 cup of water. Stir until the borax is dissolved.
- ° In a separate container, mix 1/2 cup (4 oz) white glue with 1/2 cup water. Add food coloring, if desired. Neon food coloring gives a great color. Also add a little glow-in-the-dark paint for night time fun.
- Note: Use clear Gel glue for a really cool transparent slime!
Baked: Cookies: No Bake Cookies

Add the first four ingredients into a 4-quart sauce pan
- 1/2 cup butter or 1/2 cup margarine
- 2 cups sugar
- 1/2 cup milk
- 4 tablespoons cocoa
- 1/2 cup creamy peanut butter (or chunky but is seems to make a more crumbly dry cookie)
- 2 teaspoons vanilla
- 3 -3 1/2 cups dry quick-cooking oats
