Spicy Noodle Stir-Fry with Vegetables

A stir-fry is an easy, quick, nutritious and delicious meal
- Sauce:
- 2 nests dried, medium egg noodles (I used Blue Dragon, low fat noodles)
- 2 tablespoons soy sauce
- 1/2 tablespoon Worcestershire sauce
- 1/2 tablespoon oyster sauce
- 2 tablespoons tomato ketchup
- 1 teaspoon sugar
- 3/4 tablespoon tamarind paste
- 1/2 tablespoon chili garlic paste
- 1 tablespoon vegetable stock or water
- Salt and fresh ground black pepper, to taste
- 1 tablespoon sesame seeds
- 2 tablespoons sesame oil
- 1 onion, halved and sliced
- 1 tablespoon fresh ginger, minced
- 3 cloves garlic, minced
- 2 to 3 fresh red chilies, minced (use per intensity and taste)
- 1 head broccoli, cut into small florets
- 1 small red bell pepper, deseeded and cut into strips
- 1/2 small yellow bell pepper, deseeded and cut into strips
- 4 baby corns, halved lengthwise
- 4 baby carrots, quartered lengthwise
- 4 snow peas, trimmed and halved diagonally
- 2 tablespoons scallions (spring onion), thinly sliced
- Sesame seeds, for sprinkling
- Lime wedges, for squeezing

Cook the rice sticks according to the package instructions
- BBQ Shrimp Marinade:
- 8 oz rice sticks
- 12 medium-sized shrimp, shelled (but leave tail intact) and deveined
- 3 lettuce leaves, thinly cut
- 1/2 small cucumber, cut into thin strips
- 1 cup fresh bean sprouts
- 1/2 small carrot, peeled and cut into thin strips
- Some cilantro leaves, coarsely chopped
- Some mint leaves, coarsely chopped
- Some perilla leaves, coarsely chopped (optional)
- Some Thai basil leaves, coarsely chopped (optional)
- 3 tablespoons roasted peanuts, coarsely ground
- 1 teaspoon fish sauce
- 3 heavy dashes black pepper powder
- A pinch of turmeric powder

Directions Combine the milk, 1 cup of water, butter, sugar and salt in a saucepan
- 1 cup milk
- 1 cup water
- 2 tablespoons butter
- 1 tablespoon white sugar
- 1 1/2 teaspoons salt
- 5 1/2 cups all-purpose flour
- 1 (.25 ounce) envelope active dry yeast
- 1 egg yolk
- 1 tablespoon water
Cheesy Vegetable Chowder

An absolute filling and wonderful KEEPER
- 2 Tablespoons butter
- 1/2 cup chopped onion
- 1 cup finely chopped carrot
- 1 celery stick, finely chopped (feel free to add more celery if you like celery; I don't, so I don't add much)
- 1 Tablespoon minced garlic
- 4 cups chicken broth (I usually use a mixture of low-sodium chicken broth and broth made with chicken soup base because it gives it such nice flavor)
- 2 large baking potatoes, peeled and chopped
- 1 Tablespoon flour
- 1/2 cup water
- 2/3 cup milk
- 2 cups chopped broccoli
- 2 heaping cups shredded cheddar cheese
Shrimp With Chinese Greens Stir fry

This is the greatest recipe I have found
- 1/2 - 3/4 pound shrimp
- 1 tablespoon Chinese rice wine or dry sherry
- 1/2 teaspoon salt
- 1 tablespoon cornstarch
- 1/2 pound Chinese greens (bok choy)
- 4 ounces fresh mushrooms, or 6 Chinese dried mushrooms (also called dried Shiitake mushrooms)
- 2 tablespoons vegetable or peanut oil for stir-frying, or as needed
- 2 thin slices ginger
- 1/4 teaspoon salt
- 1/4 cup chicken broth, sodium-reduced if possible
- 1/2 teaspoon sugar
- 1 tablespoon light soy sauce
- black pepper, to taste
- 1 teaspoon cornstarch mixed with 2 teaspoons water

- 1/2 cup diced green bell pepper
- 1 can (15 oz each) Rosarita® Premium Whole Black Beans, drained, rinsed

Quinoa Mac N’ Cheese

Heat oil in med. saucepan over med
- 2 tsp olive oil
- 1 med. leek white and pale green parts halved and sliced (1 cup)-OR chives are fine too
- 1/2 cup diced tomato, or red/green pepper
- 1 1/2 cups quinoa, rinsed and drained (OR you can just use pre-cooked and cut back on the water and cooking time)
- good pinch of salt
- a few grinds of seasoning salt
- 2 cloves garlic, minced
- 3 cups of water (or stock)
- 2 large eggs
- 1 cup soy milk, non-fat milk, or milk of choice
- 1 1/2 cups grated Cheddar cheese, more for sprinkling- NOTE: (You may find you need more cheese, BUT I use this amount to still keep the dish ‘lighter’ yet very flavorful.)
- Optional- Crushed Red Pepper, Panko Bread crumbs for topping
- Toppings (optional)- salsa, hot sauce, sour cream, scallions (you get the picture)
