- 1 cup quinoa
- 1 ⁄2 red onion, chopped
- 1 bell pepper, seeded and chopped
- 3 cloves garlic, minced
- 1 15-ounce can black beans, drained
- 1 tomato, diced
- 1 cup instant brown rice
- 1 tablespoon extra virgin olive oil
- 1 cup cheddar cheese, sliced or grated
- 1 avocado, diced (optional)
- Salt and pepper

Makes 9 cups In a microwave, bring the broth to a boil
- 6 cups vegetable broth (or beef broth or chicken broth)
- 1 onion, diced (see TIPS)
- 2 carrots, peeled and diced

- 2 cups (about 5 ounces) chopped cabbage
- 2 cups (about 6 ounces) broccoli, cut into florets
- 1 teaspoon dried thyme

- Place the following in a mixing bowl:
- Preheat oven to 350*
- 1/2 cup vegetable oil
- 3 large eggs
- 1 1/2 cups granulated sugar
- 1 1/2 cups pumpkin purée (canned pumpkin)
- 1 1/2 teaspoons pumpkin pie spice, or 3/4 teaspoon ground cinnamon plus a heaping 1/4 teaspoon each ground nutmeg and ground ginger
