- 2 russet potatoes, washed and dried
- 1 small head of cauliflower, stem removed cut into florets
- 1 1/2 cups fat free chicken broth
- 1 1/2 cups 1% reduced-fat milk
- salt and freshly cracked black pepper
- 1/2 cup light sour cream
- 10 tbsp reduced-fat shredded sharp cheddar cheese
- 6 tbsp chopped chives, divided
- 3 slices bacon, cooked and crumbled (you can use turkey bacon if you prefer)

- 1 pound bacon
- 1 large head iceberg lettuce - rinsed, dried, and chopped
- 1 red onion, chopped
- 1 (10 ounce) package frozen green peas, thawed
- 10 ounces shredded Cheddar cheese
- 1 cup chopped cauliflower or sliced water chestnuts
- 2-3 sliced hard boiled eggs
- 1 1/4 cups mayonnaise
- 2 tablespoons white sugar
- 2/3 cup grated Parmesan cheese

- 1 lb lean (at least 80%) ground beef
- 1 large onion, chopped (1 cup)
- 1/2 teaspoon salt
- 1 cup shredded Cheddar cheese (4 oz)
- 1/2 cup Original Bisquick® mix
- 1 cup milk
- 2 eggs
Ranch Dressing Home Made

1. Combine all ingredients, store in an airtight container
- 1/4 C Black Pepper
- 1 1/2 C Parsley Flakes
- 1/2 C Garlic Powder
- 2 T Kosher Salt
- 1/4 C Granulated Garlic
- 3/4 C Granulated Onion
- 2 T Dill Weed
- 2 cups mayonnaise
- 2 cups buttermilk
- 1 1/2 cups sour cream
- 1 teaspoon of lemon juice

- 1 lime, juice
- 1 green onion
- 1 clove garlic
- 3/4 cup buttermilk**
- 1/4 cup mayonnaise (completely optional)
- 1/2 tsp cumin seeds, toasted and ground
- salt and pepper to taste
WW Taco Casserole Lightened

- Ingredients:
- 24 Baked Tostitos Scoops
- 1 T Chili Oil (I found this in the Asian foods aisle) - if you are considering replacing this with regular oil please note the chili oil adds a lot of spice and flavor to this dish, so replacing it will affect the flavor profile
- 1 Onion, chopped
- 2 garlic cloves, minced
- 1 1/4 lbs extra lean ground turkey (I used Jennie-O which comes in a 1.25 lb package)
- 2 T taco seasoning
- 15 oz can black beans, drained
- 1 c salsa (I used medium)
- 1 c reduced fat shredded Mexican cheese (I used Weight Watchers brand)

- 1 can refrigerated reduced-fat Pillsbury crescent rolls
- 1 Tbls olive oil
- 1/4 cup diced onion
- 1/2 cup chopped red bell pepper
- 3 large eggs (or egg substitute)
- 1 Tbls milk
- salt and pepper to taste
- 8 oz sausage or bacon or ham, cooked and crumbled (turkey sausage works great)
- 1 cup refrigerated hash brown potatoes (if using frozen, thaw first and then pat dry with paper towel)
- 1 cup reduced-fat shredded cheddar cheese
- 1/4 cup thinly sliced green onions
