- 1 bell pepper (any color), cut into four 1 cm-thick rings
- 4 large eggs
- coarse salt and ground pepper
- 1 Tbsp. grated Parmesan
- 4 slices multigrain bread, toasted
- 8 cups mixed salad greens
Jar Salads

This is the greatest idea I have ever seen
- 1 . Dressing on the bottom, lettuce on the top. If the two are touching the lettuce will turn to slime.
- 2 . So, dressing goes in first. On top of your dressing, use a rather "hearty" vegetable, such as shredded cabbage, pea pods, or julienne carrot matchsticks. They can withstand the acidity of the dressing, and actually get better!
- 3 . Pack it in. Use a nice variety of colorful vegetables! Make it fun and involve the kids.
Frito Taco Casserole

Frito Taco casserole is almost as classic as a frito pie
- 1 1/4 pounds ground beef
- 1 (16 ounce) can refried beans
- 1 (4 ounce) can mild green chiles, diced
- 2 cups cooked rice
- 2 cups cheddar cheese, grated, or Mexican cheese blend
- 2 cups Fritos, or corn chips of your choice, divided
- 1 cup salsa
- 1/4 cup water
- 1 medium yellow onion, chopped
- 1 (1.25 ounce) package taco seasoning
- Kosher salt and freshly ground pepper, to taste

- 1/2 cups Panko Bread Crumbs
- 1 Tablespoon Kosher Salt, Divided
- 1/2 teaspoons Fresh Ground Black Pepper

Preheat oven to 350*F. Grease and flour two 8 inch x 2 inch baking pans and set aside

- 1 cup Irish cream liqueur, divided

- 1 (13.2 oz) can Simply Pillsbury Crusty French Bread refrigerated dough
- 1 T extra virgin olive oil
- 2 c baby spinach, chopped
- 1 garlic clove, minced
- 3 oz 1/3 less fat cream cheese
- 1/2 c fat free sour cream
- 2 T shredded Parmesan cheese
- 1/8 t chipotle chili pepper (from your spice rack)
- 1/8 t garlic salt
- 1/8 t salt
- 1/8 t black pepper
- 1/3 c shredded 2% reduced fat Mozzarella cheese

Low Fat Taco Salad with Chunky Avacado Tomato Salsa Seasoning 2 tbsp chili powder 1 tbsp paprika 2 tsp grou...
- 2 tbsp chili powder
- 1 tbsp paprika
- 2 tsp ground cumin
- 1 tsp dry oregano
- 1/2 tsp cinnamon
- 1/2 tsp red pepper flakes ( or more for a spicier seasoning)
- 1 pound extra lean ground beef or turkey
- 2 cloves minced garlic
- season with salt and pepper
- 4 whole wheat
- 7 inch tortillas
- olive oil
- 3 tbsp tomoato paste
- 2 tbsp mollasses
- seasoning from above minus 1 teaspoon
- Coarsely chop
- 2 small tomatoes
- 1 small red pepper
- 1 avacado
- 1/2 small red onion
- 1 clove minced garlic
- finely grated zest of one lime
- juice of one lime
- 1/4 cup chopped fresh cilantro
- season with salt and pepper
- 1 teaspoon reserved seasoning
Avocado and Grilled Corn Salad with Cilantro Vinaigrette

What a great summer salad
- 5 Ears Corn, husk removed, brush with olive oil and grilled, remove corn with sharp knife
- 2 Avocado’s, diced and sprinkled with lemon juice to prevent browning
- 2 C. Tomatoes, red and yellow cherry variety or equivalent
- 1 Small red onion, finely diced
- 3/4 C. Feta, crumbled
- 1 1/2 C. English cucumber, skin on and chopped small dice
- Add to a large bowl and refrigerate until ready to use.
- Cilantro Vinaigrette
- 6 T. Olive oil
- 2 T. Sherry vinegar
- 1 t. Garlic powder
- 2 T. Fresh cilantro, minced
- 1/2 t. Salt
- 10 Grinds of fresh ground pepper
- Add all of the above ingredients in a small glass jar with a lid. Shake really well. Taste and adjust seasoning as you desire.
