Ultimate Nachos

Put nachos under broiler for a few minutes instead of 350* oven
- 1/2 pound ground beef
- 2 tablespoons taco seasoning
- 6 ounces restaurant-style tortilla chips (6 cups)
- 1 1/2 cups shredded Cheddar cheese
- 1 small jalapeno pepper, deseeded and thinly sliced
- 1/2 cup chopped tomato (1 small)
- 1 tablespoons chopped fresh cilantro (optional)
- 1 cup salsa
- 1 cup sour cream
Roast Chicken with Red Potatoes

I know, I know everyone has roasted a chicken before
- one 3 to 4 pound chicken
- 4 tablespoons butter
- 2 tablespoons rosemary
- 2 tablespoons thyme
- 1 clove garlic
- Kosher salt and black pepper
- 1/2 cup white wine
- 1 1/2 pounds red potatoes
- 2 tablespoons olive oil
The Best Homemade Cheesecake

Preheat oven to 325 degrees
- 1 1/2 cups graham cracker crumbs
- 5 Tbsp sugar
- 1/3 cup melted butter
- 3 (8oz) cream cheese, softened
- 1 1/2 cups sugar
- 4 eggs, separated
- 1 Tbsp lemon juice
- 1 tsp vanilla
Sausage Cheese Bread Roll

This sounds like my kind of breakfast
- 1 loaf frozen bread dough, thawed
- 1 breakfast sausage (Jimmy Dean Sage is our favorite)
- 8 to 10 ounces cheese, shredded (we typically use cheddar, but anything is good)
- 2 eggs (raw, used as a binder for other ingredients)
Pioneer Woman's Favorite Meatloaf

Serve the meatloaf next to mashed potatoes
- MEATLOAF
- 1 cup whole milk
- 6 slices white bread
- 2 pounds ground beef
- 1 cup (heaping) Freshly grated parmesan cheese
- 1/4 teaspoon seasoned salt
- 3/4 teaspoons salt
- Freshly ground black pepper to taste
- 1/3 cup minced flat-leaf parsley
- 4 eggs beaten
- 10 slices thin or regular Bacon
- SAUCE
- 1-1/2 cups ketchup
- 1/3 cup brown sugar
- 1 teaspoon dry mustard
- Tabasco to taste
Olive Garden Salad Dressing

Place all ingredients in a blender until well mixed
- 1/2 C. Mayonnaise
- 1/3 C. White Vinegar
- 1 tsp. Vegetable Oil
- 2 Tbsp. Corn Syrup
- 2 Tbsp. Parmesan Cheese
- 2 Tbsp. Romano Cheese
- 1/4 tsp. Garlic Salt – or one clove garlic minced
- 1/2 tsp. Italian Seasoning
- 1/2 tsp. Parsley Flakes
- 1 Tbsp. Lemon Juice
- sugar (optional)
Green Chile Chicken Enchiladas

Melt the butter in a medium saucepan over medium heat
- 3 tablespoons butter
- 3 tablespoons flour
- 1 clove garlic, minced
- 1 1/2 cups chicken stock
- 1 1/2 cups milk, at room temperature
- 1 teaspoon salt
- 1 cup chopped green chile
- 1/2 teaspoon oregano
- 2 cups chopped or shredded cooked chicken
- 1/2 cup chicken stock
- 2 tablespoons flour
- 1/2 teaspoon salt
- 1/2 teaspoon ground red chile powder
- 2 tablespoons chopped green chile
- 1/4 cup minced onion
- 12 6" corn tortillas, quartered
- 1 1/2 cups shredded Mexican blend cheese
Baked Spaghetti

Brown the meat with the onion
- 1 lb ground beef
- 1 can Hunt’s spaghetti sauce
- 1 can tomato sauce, 15 oz
- 1 onion, diced
- 2 about 2 cups Mozzarella
- generous shakes of oregano, basil, salt and pepper (optional)
- 8 oz spaghetti (the picture shows 16oz., but you only need 8oz)
Crock Pot Green Chili Stew

I usually use chicken instead of pork and beef in my stew
- 3 T. oil
- 2 garlic cloves, minced
- 1 lg. onion, diced
- 1 lb. cubed sirloin or ground sirloin
- 1/2 lb. cubed pork or ground pork
- 3 c. chicken broth
- 2 c. water
- 2 - 4 oz. cans diced green chilies
- 4 lg. potatoes, diced
- 10 oz. pkg. frozen corn (optional)
- 1 tsp. black pepper
- 1 tsp. crushed dried oregano
- 1/2 tsp. ground cumin
- 1 tsp. salt
Southern Collard Greens

Must try these. They are so nutricious
- 1 1/2 quarts water
- 1 1/2 pounds ham hocks
- 4 pounds collard greens, rinsed and trimmed
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1/4 cup vegetable oil
- salt and pepper to taste
- splash of cider vinegar if desired and shake of hot pepper sauce.
- I don't think I will use the vegetable oil.
