WW Tortilla Soup

This homemade Mexican style chicken soup is so rich in intriguing flavors, vibrant in color and full of tantalizing...
- 1 tablespoon plus 1 teaspoon extra virgin olive oil
- 2 1/2 cups chopped onion
- 2 tablespoons chopped garlic
- 2 (6-inch) corn tortillas, chopped
- 2 tablespoons tomato paste
- 4 teaspoons Spice of Life “Southwestern Mesquite” spices or make my blend of spices, see shopping tip below
- 6 cups reduced-sodium chicken broth, I like Swanson’s
- 1 (15 oz) can diced tomatoes
- 1 (14 oz) can yellow hominy, drained and rinsed
- 1 (14 oz) can black beans, drained and rinsed
- 2 cups cooked chopped chicken
- Juice of 1 lime
- Topping
- 1 1/4 cups reduced-fat tortilla chips, crushed
Lazygirl's Ground Turkey Stroganoff

Directions Bring a pot of lightly salted water to a boil
- 1 (8 ounce) package uncooked egg noodles
- 1 tablespoon vegetable oil
- 1 pound ground turkey
- 1 tablespoon minced onion
- 1 cube chicken bouillon, crumbled
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1/2 cup water
- 1 tablespoon paprika
- salt to taste
Parmesan Tuna Patties (low fat, low carb)

Drain tuna. Blend all ingredients in a medium size bowl and form into patties
- 1 (6 oz) can light tuna
- 1 tablespoon reduced fat mayonnaise
- 1 large egg or 1/4c egg substitute
- 2 tablespoons Parmesan cheese
- 2 tablespoons ground flaxmeal
- 1 dash garlic powder
- 1 dash onion powder
- 1 dash salt
Southwestern Eggrolls

These little rolls make great appetizers if you’re watching a sporting event
- For the egg rolls:
- 2 cups frozen corn, thawed
- 1-15 oz can black beans, rinsed and drained
- 1-9 oz package frozen chopped spinach, thawed and squeezed dry with paper towel
- 2 cups shredded Mexican cheese
- 1-7oz can diced green chiles, drained
- 4 green onions, finely chopped
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1 tsp salt
- 1/2 tsp cayenne pepper
- 1 package of egg roll or wonton wrappers

- 2 (10 ounce) packages frozen broccoli

- 1/4 cup salt
- 2 1/2 tablespoons ground black pepper
- 3 tablespoons sweet paprika
- 1 teaspoon cayenne pepper, or to taste
- 2 tablespoons garlic powder
- 5 tablespoons pan drippings
- 1/2 cup chopped onion
- 4 cups ketchup
- 3 cups hot water
- 4 tablespoons brown sugar
- cayenne pepper to taste
- salt and pepper to taste
- 1 cup wood chips, soaked

- 1/4 – 1/2 lb sausage
- 1 tbs butter
- 1 tbs olive oil
- 1 cup diced red potatoes
- 1/2 cup sliced mushrooms
- 1/2 cup diced yellow onion
- 2 sprigs of thyme, or 1 teas dried thyme
- 6 eggs
- 2 tbs milk
- 1/2 teas salt
- 1/4 teas pepper
- 4 ounces cubed colby jack cheese
- 2 scallions, diced

- 1 1/4 cups corn flake crumbs
- 2 - 3 teaspoons chipotle chili powder
- 1 teaspoon ground cumin
- 3/4 teaspoon garlic salt
- 1/2 cup evaporated milk
- 12 bone-in chicken thighs, about 4 pounds total

- 1 (10.5 ounce) can beef consomme
- 1 cup water
- 1 pound thinly sliced deli roast beef
- 8 slices provolone cheese
- 4 hoagie rolls, split lengthwise
