- Ingredients
- 1 Tablespoon olive oil
- 1/2 yellow onion, diced
- 1 red pepper, diced
- 15 ounce can Rotel
- 4.5 ounce can green chiles
- 15 ounce can whole corn, drained
- 15 ounce can black beans, drained and rinsed
- 10 ounce can Enchilada Sauce (I used Mild)
- 2 cups Milk, divided
- 3 Tablespoons butter
- 3 Tablespoons Flour
- 1 cup chicken broth, divided
- salt and pepper
- 2 whole chicken breasts, cooked and shredded or 1 whole rotisserie chicken, shredded
- 1 cup Mexican cheese of choice (I used Monterey Jack)
- Sour cream (Optional)
- Cilantro (Optional)
- Extra Cheese (Optional)
- Tortilla Chips (Optional)

Layered Mexican Casserole

- 1 can (15 oz.) Mild Green Chile Enchilada Sauce (If you need gluten-free be sure to choose a brand of green chile sauce that doesn't contain wheat. One is La Victoria.)
- 2 cans (15. oz) pinto beans
- 1 large onion, diced in 1/2 inch pieces
- 1 large green bell pepper, diced in 1/2 inch pieces
- 2 tsp. olive oil
- 1 T ground cumin
- 1 can (4 oz) diced green chiles plus juice (not jalapenos unless you want it really hot)
- 1-3 T Green Tabasco Sauce (Optional, but nice if you want it a bit hotter; we used two tablespoons.)
- 3/4 cup light sour cream
- 4 cups diced, cooked chicken
- 1/2 cup thinly sliced green onion
- 2 cups grated low-fat Mozzarella

- 11 Tablespoons unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1 teaspoon cinnamon
- 2 1/2 cups flour
- 1/2 cup semi-sweet chocolate chips

- 2/3 cup ketchup
- 1 cup white sugar or splenda
- 1/2 cup white vinegar
- 1 cup vegetable oil
- 1/2 cup lemon juice
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 1/2 small onions, grated
- 2 cloves garlic, pressed
- 1/4 cup crumbled blue cheese optional but good
Best Broccoli Ever

Normally, broccoli gets squishy when you cook it
- Put the broccoli on a cookie sheet. Toss with:
- Take 4 to 5 pounds of broccoli (I just got two large bunches),
- cut into florets (but relatively big ones.)
- dry them THOROUGHLY. That is, if you wash them.
- 5 T olive oil,
- salt and pepper
- 1 1/2 tsps kosher salt,
- 1/2 tsp fresh ground pepper
- add 4 garlic cloves that are peeled and sliced and toss them in too.
