Cornbread Dressing

My favorite cornbread dressing
- 2 pkgs CornKits
- 6 C cornbread crumbs and dried bread crumbs
- 1 cup butter
- 1 onions, chopped
- 6 stalks celery, chopped
- 1 pound ground turkey
- 2 T dried sage
- 1 teaspoon dried thyme
- 1 T poultry seasoning
- 1/2 teaspoon ground black pepper
- 1/2 cup chopped fresh parsley
- 2 eggs
- 4 cups chicken stock
Peach Breakfast Bake

2 tbsp melted buttery spread or oil (Low-Fat Version: applesauce can be used instead
- 2 1/2 cups sliced peaches
- 1/2 tbsp lemon juice
- 1/2 tbsp arrowroot or cornstarch
- 1/4 tsp cinnamon
- 3/4 cup shredded wheat, crushed (You can try rice chex or crispies or flake cereal for a gluten-free version.)
- 1/8 tsp uncut stevia OR 1/4 cup sugar of choice
- 2 tbsp melted buttery spread or oil (Low-Fat Version: applesauce can be used instead.)
- 1/4 tsp salt (use only 1/8 tsp if using salted buttery spread)
- 1 container yogurt of choice, such as SoDelicious or Wholesoy
Italian Bread with Gorgonzola

Cream the butter with the Gorgonzola cheese
- Long loaf of Italian Bread or long crusty rolls.
- 1/4 cup butter
- 1/2 cup Gorgonzola cheese
- 1 to 2 cloves garlic
- Parsley
- Salt
- Pepper
- Fresh grated Parmesan cheese
- Optional: Basil or Oregano

Chicken-"Fried" Steak with Spiced Gravy

Preheat oven to 425 degrees F
- 1 pound lean beef top round steak, cut 1/2 inch thick
- Nonstick cooking spray
- 1/4 cup all-purpose flour
- 1 tablespoon grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- 1/8 teaspoon cayenne pepper
- 1 egg white
- 1/3 cup buttermilk
- 1 cup crushed cornflakes (2 cups whole flakes)
- 1 recipe Spiced Gravy (see recipe below)
