Jicama Slaw

Cool, crunch and very tasty
- 1 head of Napa Cabbage, halved and sliced into shreds
- 2 cups grated or julienned jicama
- 2 cups thinly sliced apples
- 1 handful cilantro, coarsely chopped
- 3/4 cup mayonnaise
- 2 tablespoons lemon juice
- 2 tablespoons of sugar
- 2 teaspoons of apple cider vinegar
- Salt and pepper to taste
Rump Roast in the crock pot

Put it all in the crock pot and enjoy it later
- 3 lb grass fed rump roast
- 2-3 large carrots- peeled & chopped
- 5-6 red & russet potatoes, washed & halved
- 1/2 white onion - chopped
- 12 oz coke or other dark soda
- 16 oz beef stock
- 3 tbsp teriyaki sauce
- 1 tbsp minced garlic
- Salt, pepper to taste
Red Wine-Braised Short Ribs

- 3 to 4 pounds bone-in beef short ribs
- Kosher salt
- Canola oil, as needed
- 1 sweet onion, cut into large dice
- 1 medium carrot, cut into large dice
- 1 stalk celery, cut into large dice
- 1 head garlic, halved horizontally
- 4 Roma tomatoes, cut into large dice
- One 750-milliliter bottle red wine (Bordeaux or Burgundy)
- 2 cups chicken stock
- 2 tablespoons black peppercorns
- A few sprigs fresh thyme
- A few sprigs fresh rosemary
- A few bay leaves
- Grits, for serving
- Fried shallots, for serving, optional
- 3 tablespoons chopped chives
Beef Short Ribs

Ina's recipe,.. of course it's great!
- Fresh thyme sprigs
- 1 tablespoon brown sugar
- 6 cups beef stock
- 6 beef short ribs, trimmed of fat
- Kosher salt
- Freshly ground black pepper
- 1/4 cup good olive oil
- 1 small fennel, fronds, stems, and core removed, large-diced
- 1 leek, cleaned and large-diced, white part only
- 1 1/2 cups chopped onion (2 onions)
- 4 cups large-diced celery (6 large stalks)
- 2 carrots, peeled and large-diced
- 3 garlic cloves, minced
- 2 tablespoons tomato paste
- 1 (750-ml) bottle Cotes du Rhone or other dry red wine
- Fresh rosemary sprigs
Cake, Pink Lemonade (scratch)

Refreshing and pretty!
- 2 1/2 1/2 Cups (285g) cake flour
- 1 1/2 1/2 Cups (300g) sugar
- 1/2 tsp (3g) salt
- 2 1/2 tsp (12g) baking powder
- 12 Tbls (169g) unsalted butter....Cut into 1/2 inch slices onto waxed paper to soften slightly (still very cool
- to the touch). If it becomes too soft, refrigerate for a few minutes. Do not soften in microwave
- 4 large eggs
- 3/4 cup (190g) frozen pink lemonade concentrate (thawed) ( if you cannot find pink, you can use regular frozen lemonade)
- 1/2 cup (121g) milk
- 1 Tablespoon (10g) lemon extract
- 1 lemon zested
- pink coloring gel, if you want the cake layers to be pink....we used AmeriColor Deep Pink
Pumpkin Pie

King Arthur says this pie is a rich, spicy pie that slices well and has a bright pumpkin flavor
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 tablespoon King Arthur Unbleached All-Purpose Flour
- 1/2 teaspoon salt
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/8 teaspoon ground cloves
- 1/8 teaspoon freshly ground black pepper (optional)
- 3 large eggs, beaten
- 2 cups (or one 15-ounce can) pumpkin
- 1 1/4 cups light cream or evaporated milk

- COOKIES
- 1 1/4 cups confectioners' sugar
- 1 cup + 2 tablespoons salted butter, room temperature
- 1 large egg yolk
- 1/2 teaspoon salt
- 1/4 teaspoon Fiori di Sicilia, or flavor of your choice (see "tips," below)
- 2 3/4 cups King Arthur Unbleached All-Purpose Flour
- ICING
- 2 1/4 cups confectioners' sugar or glazing sugar
- 2 tablespoons light corn syrup
- 1 1/2 tablespoons, or up to 2 tablespoons + 1 teaspoon milk; enough to make a pourable/spreadable icing
- food coloring, optional
- 1 cup coarse sugar or colored sugar for decorating, optional
Mocha Chocolate Icebox Cake

- 2 cups cold heavy cream
- 12 ounces Italian mascarpone cheese
- 1/2 cup sugar
- 1/4 cup Kahlúa liqueur
- 2 tablespoons unsweetened cocoa powder, such as Pernigotti
- 1 teaspoon instant espresso powder
- 1 teaspoon pure vanilla extract
- 3 (8-ounce) packages Tate’s Bake Shop chocolate chip cookies
- Shaved semisweet chocolate, for garnish

Butter should be softened at room temperature first; butter should not be too soft or runny
- 2 cups (453g) unsalted butter
- 1 teaspoon (5ml) vanilla extract
- 1/8 teaspoon salt (pinch of salt)
- 2 tablespoons (30ml) heavy cream
- 4 cups (500g) confectioner's sugar
Hazelnut Crinkle Cookies

- 3 C all purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 11 oz jar of Nutella spread
- 1/4 C shortening
- 1 1/3 C granulated sugar
- 1 tsp vanilla
- 2 eggs
- 1/3 C milk
- 1/2 C hazelnuts, chopped and toasted
