Strawberry Salsa

A refreshing change from tomato salsa
- 1 C strawberries, hulled and coarsely chopped
- 2 small granny smith apples, peeled, cored and diced
- 1 lg kiwi, peeled and diced
- 1 small orange, zested and juiced
- 2 Tbls packed brown sugar
- 2 Tbls apple jelly
Banana Bread, whole-grain

the best banana bread I've ever had!
- 2 cups thoroughly mashed banana; about 4 or 5 medium bananas
- 1/2 cup vegetable oil
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup King Arthur Unbleached All-Purpose Flour
- 1 cup King Arthur White Whole Wheat Flour or Premium Whole Wheat Flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 3/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup chopped walnuts, toasted if desired; optional*
- *Leave the nuts out, if desired; or substitute up to 1 cup chopped dried fruit, chocolate or butterscotch chips, sunflower or pumpkin seeds, or other mix-ins of your choice.
- TOPPING
- 1 tablespoon sugar
- 1/2 teaspoon ground cinnamon
Cookies, Butter

To make the cookies: Combine the sugar, butter, egg yolk, salt, and flavor, beating until smooth
- COOKIES
- 1 1/4 cups confectioners' sugar
- 18 tablespoons (1 cup + 2 tablespoons) salted butter, room temperature
- 1 large egg yolk, white reserved for topping if desired (see "tips," below)
- 1/2 teaspoon salt
- 1/4 teaspoon Fiori di Sicilia, or flavor of your choice (see "tips," below)
- 2 3/4 cups King Arthur Unbleached All-Purpose Flour
- ICING
- 2 1/4 cups confectioners' sugar
- 2 tablespoons light corn syrup
- 1 1/2 tablespoons, or up to 2 tablespoons + 1 teaspoon milk; enough to make a pourable/spreadable icing
- food coloring, optional
- 1 cup coarse sugar or colored sugar for decorating, optional
Lemon Bars

Light and fresh, a great treat for summer time
- CRUST:
- 1 C butter, room temperature
- 1/2 C powdered sugar
- 2 C flour
- dash kosher salt
- FILLING:
- 4 eggs, room temeperature
- 1/2 C flour
- 2 C sugar
- 6 Tbl lemon juice, fresh squeezed
Blueberry Muffins, whole-grain

Fresh, delicious, and a healthy version of muffins from King Arthur
- For mini muffins:
- 2 1/2 cups King Arthur White Whole Wheat Flour or Premium Whole Wheat Flour
- 1 cup brown sugar
- 3/4 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon, optional
- 1 cup blueberries, fresh or frozen, or Blueberry Jammy Bits
- 1 teaspoon vanilla extract
- 1/3 cup vegetable oil
- 1 1/2 cups buttermilk or yogurt (regular or Greek-style)
- cinnamon-sugar or coarse white sparkling sugar for topping, optional
- This recipe will make about 3 dozen small muffins.
- Bake in a preheated 400°F oven for 9 to 10 minutes, or until a toothpick inserted into the center of one of the muffins comes out clean.

Boxed Mac and Cheese Fix Up

I had left over veggies and came up with this recipe
- OPTIONAL:
- 2 pkgs Kraft Deluxe Mac and Cheese
- 4 Tbls butter
- 2 Tbls flour
- 1 C milk
- 1 C cheddar cheese, shredded
- 2 Tbls bread crumbs
- any left over veggies or sliced hot dogs
Apple Crumble Cake

Irish recipe
- For the crumble topping:
- 4 oz butter plus extra for greasing
- 5 oz soft light brown sugar
- 2 large free range eggs
- 7 oz plain flour, sifted
- 1 tablespoon baking powder
- pinch of salt
- 1 teaspoon ground cinnamon
- 11 oz peeled, cored and sliced cooking apple (Shouldn’t be more than one large one)
- 2 oz of vanilla sugar (or substitute with caster sugar)
- 2 oz of plain flour
- 2 oz of butter

- 1 C all purpose flour
- 1/4 tsp kosher salt
- 1/4 C granulated or powdered sugar
- 1/2 C unsalted butter (COLD) cut into 1/2" cubes
- Filling:
- 3/4 C chopped pecans (or walnuts)
- 3/4 C chocolate chips
- 6 Tbls all purpose flour
- 1 tsp vanilla
- 1 Tbl bourbon
- 1/4 tsp kosher salt
- 1 lg egg yolk
- 1 lg whole egg
- 1/3 C sugar
- 1/3 C dark brown sugar
- 6 Tbls butter, unsalted

- 1 jar marshmallow creme (7 oz)
