Panzanella (Italian bread salad)

A different kind of salad, with many flavors and textures
- 1/4 C drained capers
- 2 Tbls plus 1/4 C red wine vinegar
- 12 oz ciabatta bread or country style white bread (2-3 days old)
- 9 ripe plum tomatoes, cored and peeled and seeded (about 2 1/4 lbs)
- 2 Tbls plus 2/3 C extra virgin olive oil
- 2 Tbls plus 1/4 C red wine vinegar
- 1 clove garlic, minced
- salt and fresh ground black pepper
- 1/2 C thinly sliced fresh basil leaves
- 1 C drained roasted red bell pepper strips
- 1/4 C pitted kalamata olives halved lengthwise
- Fresh basil sprigs for garnish
Cabbage (un)Rolls

In a large, deep skillet or dutch oven, brown ground beef, onions and garlic together
- 1 lb lean ground beef
- 2-3 garlic cloves, minced
- 1/2 cup onion, diced
- 1 small green cabbage head, chopped (about 4 cups)
- 2 (14.5 oz) cans diced tomatoes
- 1 (8oz) can tomato sauce
- 1/2 cup beef broth
- 1 teaspoon paprika
- 1 tablespoon brown sugar
- 2 teaspoons salt
- 1 teaspoon pepper
Autumn Salad

So very good!
- 5 ounces fresh spinach (half a 10 ounce bag) (or kale)
- 1 and 1/2 cups dry small pasta
- 3/4 cup chopped celery
- 3/4 cup dried cranberries
- 1 can (15 ounces) mandarin oranges
- 1 large Granny Smith Apple
- 1 teaspoon lemon juice
- 1/3 cup pecans (toasted)
- Optional: Feta cheese
- Dressing
- 4 tablespoons vegetable oil (or olive oil)
- 2 tablespoons apple cider vinegar
- 2 tablespoons white wine vinegar
- 2-4 tablespoons white sugar
- 1/8 teaspoon each: paprika, onion powder
- 1 tablespoon poppyseeds
French Toast

Mix together dry ingredients in a medium-sized bowl
- 4 eggs 4 eggs
- 2/3 cup milk
- 1/3 cup flour
- 1/3 cup sugar
- 1/2 teaspoon vanilla
- 1/4 teaspoon salt
- 1/8 teaspoon cinnamon
- 12 slices of bread
- Butter, for cooking and spreading
- Syrup
Buttercream Frosting from the farm

- 2 pounds confectioners' sugar
- 3 to 4 tablespoons milk or heavy whipping cream

- 1 large cucumber
- 2 Tbls rated onion
- 1/8 tsp salt
- 1 8 oz block of cream cheese (room temperature)
- 1 Tbl Mayo (the real stuff)
- dash of green food coloring

- For the topping:
- Baking spray with flour, such as Baker's Joy
- 2 cups all-purpose flour
- 1 1/2 cups sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon kosher salt
- 1 extra-large egg, lightly beaten
- 1 1/4 cups whole milk
- 2 tablespoons unsalted butter, melted
- 2 teaspoons pure vanilla extract
- 8 tablespoons (1 stick) unsalted butter
- 1/2 cup sugar
- 1/2 teaspoon ground cinnamon

- 1 cup chopped peppermint candies
- 1 cup prepared caramel sauce

White Velvet Cake

- 1 box (18.25 oz) white cake mix (I use Pillsbury)
- 1 C granulated sugar
- 1 C + 2 TBLS cake flour
- 1/8 tsp salt
- 1 1/3 C water
- 3 eggs (room temperature)
- 1/2 C melted to butter
- 1 C sour cream
- 1 tsp (pure)vanilla or almond extract (optional)
