In a large bowl, whisk together the olive oil, lime juice, cilantro, salt, and pepper
- 2 Tblsp of Olive Oil
- 1 Tblsp Fresh Lime Juice
- 1/4 Cup of Chopped Cilantro
- 1/4 Tsp Salt
- 1/4 Tsp Freshly ground Pepper
- 2-1/2 Cups of Fresh Corn Kernels (5 ears of Corn)
- 1-1/2 Cups of diced avocado (1/2 inch pieces)
- 1 Pint cherry tomatoes, quartered
- 1/2 Cup finely diced red onions
Buffalo Tropical Wing Sauce

Bring to a low boil, then simmer for 20 minutes and let stand for 30 minutes
- 8 cups Crystal Hot Sauce - Large Container from Sam’s
- 1 Jar of Grape Jelly or 2 Squeeze Bottles
- 2 boxes of Dark Brown Sugar or 1/2 a large bag from Sam’s
- 2 Tablespoon Granulated Garlic
- 2 Tablespoon Granulate Onion
- 1 Tablespoon Oregano
- 1/4 Cup of Worcestershire
- 4 Tablespoons of Butter
- 1/4 cup of Parsley Flakes
Chicken & Okra Gumbo

Season Chicken...in large Dutch fry seasoned chicken in 2tbsp oil until brown
- 1 - 5 lb Chicken
- Dave's Creole Seasoning
- 4 Tbsp Oil
- 2 Cups chopped fresh Okra
- 1 Stick Margarine
- 4 Tbsp Flour
- 1 Tbsp Worcestershire Sauce
- 1 Onion - Chopped
- 2 Celery Stalks - Chopped
- 1 Green Pepper - Chopped
- 4 Cloves of Garlic, Minced
- 3 qts of Water
- 3 Tbsp Chopped Green Onions
Roasted Dates with Smoked Bacon

Preheat the oven to 400 degrees F
- 4 slices applewood-smoked bacon
- 16 Medjool dates
- 3 ounces fresh goat cheese
Caribbean Salsa

- 6 Roma Tomatoes
- 1 Can of Tomato Paste
- 1/2 Cup of Green Onion
- 1 Tomatillo
- 1 Tortuga Pepper
- 1/4 Cup of Salt
- 1 Tbsp Pepper
- 1/2 Cup of Lime Juice
- 1 Cup of Cilantro
Pow Pow Fried Shrimp

INSTRUCTIONS: Make the Sauce: In a small bowl whisk the sauce ingredients together
- Sauce:
- 1/2 cup mayonnaise
- 1 - 2 tablespoons hot sauce (like Cholula )
- 1/3 cup sweet chili sauce
- 1 teaspoon rice vinegar
- Breading:
- 1/2 cup cornstarch
- 2 eggs, beaten with 2 tablespoons water
- 3/4 cup all-purpose flour
- 1/2 cup breadcrumbs
- 1 teaspoon coarse salt or 1/2 teaspoon table salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- oil for deep frying - vegetable, coconut or canola
- 1 pound medium shrimp, peeled and deveined
- Garnish:
- 1 handful of mixed greens
- 1 green onion, snipped with kitchen shears (green part only)

- 1 Package Cream Cheese 8oz
- 3/4 Stick of butter or oleo
- 1 Chopped Onion
- 1 Chopped Garlic
- 1 Can of Green Chilies
- 2 - 3 Boiled Chicken Breast
- 1 Package of Flour Tortillas
- Grated Mexican Cheese (Cheddar, Monterrey Jack etc.)
- 1 Carton of half n half

- David's Creole Mix
- 4 Tbsp of Margarine
- 4 Onions - Chopped
- 4 Cloves of Garlic - Minced
- 2 Ribs of Celery - Chopped
- 1 Bell Pepper - Chopped
- 1/2 lb Smoke Sausage
- 1/2 lb of Shredded Chicken Breast
- 3 Cups of Uncooked Rice
- 6 Cups of Water
Southern Cajun Belle Deep Fried Turkey

Deep frying turkey has become more and more popular every year
- 1 pound butter
- 1 tablespoon garlic, puree
- 1 tablespoon onion, puree
- 1 tablespoon Worcestershire sauce
- 1 teaspoon lemon juice
- 1/2 teaspoon hot pepper sauce
- 4 tablespoons fajita sauce or 1 packet
- 1 tablespoon cayenne
- 1 teaspoon black pepper
- 1/2 cup white wine
- 1 teaspoon mustard
- 1/2 can chicken broth
- 13 pound turkey

- 1 (5oz) can evaporated milk
- 1 Tblsp of Baking Powder
- 2 Tblsp of Vinegar
- 1 lb of peeled crawfish tails
- Creole Seasoning
- 1 Cup All Purpose Flour
- Oil for frying
