Grilled Steak with Red Onion

Prepare the grill. Heat oil in large sauce pan over medium high heat
- 1 Tsp Olive Oil
- 4 ea Red Onion, Medium Sized, Peeled, halved and sliced
- 1/2 Tsp of Salt
- 2 Tblsp Tomato Paste
- 2-1/2 oz Brown Sugar
- 2-1/2 oz of Red Wine Vinegar
- 1 Tblsp of Dry Mustard
- 1 Beer 12oz
- 4 Beef Strip Loin Steak, each about 3/4” thick
- 1/2 Tsp Salt
- 1/4 Tsp Fresh Cracked Black Pepper
CharGrill Oysters

Boil and let simmer for 30 minutes Grill Oysters on your Pit in a Grill Tolerate Cupcake Pan, place Oyster in each
- 1 Cup of Butter
- 1 Tblsp of Olive Oil
- Dashes of Creole Seasoning Mix
- Pinch of Cayemne
- 5 Cut Jalapenos
- 1/2 Cup of Onion
- 1 Drop of Bhut Jolokia
Crawfish Casserole

Mix all ingredients except cheeses and pour into a large greased casserole
- 1 lb crawfish tail
- 1 (10 3/4 ounce) cans French onion soup
- 1 (10 3/4 ounce) cans cream of mushroom soup
- 1 (10 ounce) cans Rotel tomatoes & chilies
- 1 1/2 cups uncooked rice
- 1/3 cup butter, melted
- 1/4 cup chopped bell pepper
- 1/2 cup chopped green onion
- 1/3 cup chopped fresh parsley
- 1 cup chopped celery
- salt and pepper
- 1/2 cup grated monterey jack cheese
- 1 cup grated cheddar cheese
Mexican Chicken Casserole

Directions: Cook and dice your chicken
- 3 split fryer breasts cooked and cubed
- 1 bag of tortilla chips crushed
- 1 can of Rotel
- 1 can Cream of Chicken soup
- 1 small can of chopped green chiles
- 1 lb of Velvetta or American Cheese
Stuffed Bell Peppers

Bring a large pot of of water to a boil over high heat
- 4 Green or Red Bell Peppers
- Salt
- 5 Tblsp Extra Virgin Olive Oil
- 1 Medium Yellow Onion, Peeled and chopped
- 1 Clove of Garlic, peeled and chopped
- 1 lb of Lean Ground Beef
- 1-1/2 Cup of Cooked Rice or 3/4 Cup of Raw Instant Rice
- 1 Cup of chopped tomatoes, fresh or canned
- 1 Tblsp chopped fresh oregano or 1 tsp of dried oregano
- Fresh Ground Pepper
- 1/2 Cup of Ketchup
- 1/2 Tsp of Worcestershire Sauce
- Dash of Tabasco Sauce
Chayote and Shrimp Soup Seasoned with Stella Artois

1. To a large pot, add Chayote and enough water to cover
