- 1 Cup Cilantro
- 1 Can of Tomato Sauce
- 1 jar of Pizza Sauce
- 1 Red Onion , diced
- 1 White onion, diced
- 4 Roma tomatoes, chopped
- 1 Cup Vinegar
- 1 Tbsp salt
- 1 Tbsp Black Pepper

Hashbrown Egg Cupcakes

Take your bag of hash browns and mix in the salt, pepper, oil and 1/3 cup shredded cheese
- 1 24 oz. bag of shredded hash browns
- 2 tsp salt
- 1 tsp pepper
- 2 tbs oil
- 1/3 cup shredded cheddar
- Bacon bits or 8=10 pieces of cooked bacon, crumbled

Mushroom, Leek and Prosciutto Pizza Squares

Preheat the oven to its highest setting (500 degrees F)
- 1 tablespoon butter
- 1 large leek, white and light green parts only, sliced thin (about 2 cups)
- 2 cups sliced mushrooms
- Salt and pepper
- Flour, for dusting
- 1/2 pound prepared pizza dough
- 1 tablespoon plus 2 teaspoons extra-virgin olive oil

Maryland Style Crab Cakes

During the summer, nothing is better than eating Maryland-style crab cakes
- TARTAR SAUCE:
- 1 large egg
- 2 1/2 tablespoons mayonnaise (I like Hellman’s Real)
- 1 1/2 teaspoons Dijon mustard (I like Maille brand)
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Old Bay seasoning
- 1/4 teaspoon salt
- 1/4 cup finely diced celery (you’ll need one stalk)
- 2 tablespoons finely chopped fresh parsley
- 1 pound lump crab meat*
- 1/2 cup panko (I like the Whole Foods 365 brand for this recipe)
- Canola oil
- 1 cup mayonnaise
- 1 1/2 tablespoons sweet pickle relish
- 1 teaspoon Dijon mustard
- 1 tablespoon minced red onion
- 1 to 2 tablespoons lemon juice, to taste
- Salt and freshly ground black pepper, to taste
Margarita Shrimp with Pico de Gallo

For the Pico De Gallo Cocktail Sauce: Combine all ingredients in a medium bowl
- PICO DE GALLO COCKTAIL SAUCE:
- 1/2 ½ bunch cilantro chopped fine
- 1 serrano pepper minced
- 2 tomatoes small diced
- 1 small onion small diced
- Juice of 1 lime
- 1 bottle ketchup - (8 oz)
- 1/2 ½ tablespoon Worcestershire sauce
- 1 teaspoon salt
- 4 drops hot sauce
- MARGARITA SHRIMP:
- 2 ounces canola oil
- 2 garlic cloves
- 2 medium shallots
- 1 jalapeño stem removed
- 1 bunch cilantro
- Juice of 3 limes
- 2 ounces tequila
- 32 shrimp, 16/20 count peeled, deveined

Holiday Deep Fried Ham

A tasty, traditional Thanksgiving and Christmas deep fried ham is brined overnight in a delightful mix of flavors
- BRINE:
- 1 gallon water
- 1 gallon cider
- 1 cup dark brown sugar
- 1 cup Kosher salt
- 2 tablespoon cinnamon
- 1 tablespoon mince garlic
- HAM:
- 10 - 15 pound uncured ham
- Clear frying oil
- GLAZE:
- 3 cups pineapple juice
- 1 (8-ounce) can crushed pineapple
- 1/2 cup Dijon mustard
- 1 cup dark brown sugar
- 1/2 cup honey
- Note: This recipe requires a deep fat fryer large enough to hold the ham.
Saucy Stir Fried Pork

Cook Rice as packaged directions Meanwhile, heat dressing in large skillet on medium high heat
- 2 Cups of Instant Rice
- 1/4 Cup of Kraft Zesty Italian Dressing
- 1 lb of Pork Tenderloin, cut into thin stripes
- 1 Red Pepper, cut into thin strips
- 1/2 lb Sugar Snow Peas
- 3 Green Onions, diagonally sliced
- 2 Tblsp Soy Sauce
- 1 Tsp of Corn Starch
- 1/2 Ts Ground Ginger
Marinated Cheese

Combine first 10 ingredients in a jar; cover tightly, and shake vigorously
- 1/2 Cup Olive Oil
- 1/2 Cup White Wine Vinegar
- 1 Jar Chopped Pimentos
- 3 Cloves of chopped garlic
- 3 Tblsp of chopped green onions
- 3 Tblsp of chopped parsley
- 1 Tblsp of Sugar
- 1/2 Tsp of Salt & Pepper
- 1 Tblsp of Basil
- 1 Block of Cream Cheese - Freeze for 2 minutes to make it easy to cut.
- 1 Block of Sharp Cheddar
- Cut cheese in squares & layer alternating the cheeses.
- Pour marinade over cheese
